Okay soo I lied. It isn’t 21 days of only plant based food. It is 21 days of at least one plant based meal compliments of Veestro for their 21-day ‘Yes I Can’ Challenge.
For the next few weeks, I will be eating one Veestro meal a day. This couldn’t have come at a better time after the holiday season and it is just in time to kick start 2017. But I do want to be clear this isn’t any sort of detox or cleanse or anything of that sorts. I am not a fan of those.
This is purely a way for us to eat at least one plant based meal for 21 days straight. And thankfully, Veestro is by our side the whole way with their amazeballs meals, health and fitness tips and more.
I don’t really consider myself someone who over indulges or ever needs to “detox”. I eat whole and delicious foods 90% of the time because that is what my body craves. That is what makes me feel best each day. But I am always open to a new challenge and eating 1 plant based meal a day, isn’t something I have intentionally done before and I think it can be really valuable. Plus, haven’t you ever heard someone say “eat more plants!”? That is what Veestro is all about.
I first tried Veestro about a year ago and was obsessed. Even Jord, Mr. Carnivore, loves it. I first tried their soba noodle dish and was addicted. Last week I received a box of 21 different meals from Veestro, ranging from breakfasts to entrees to even some delicious juices.
This delivery came with a handful of dishes including: breakfast burritos, oatmeal breakfast pies, enchilada casserole, spinach pie and more. I quickly organized my freezer to fit all the meals (that was quite the experience) and thankfully Veestro’s packing is very thin and easy to squeeze in the freezer.
The night before I will pick out what meal to have the next day and let it defrost overnight in the fridge. I’m most excited for their meals for lunch. I am always running around like a looney and eating whatever I make for recipes that day or something quick, but having a Veestro meal midday can help me sit down and relax for 10-15 minutes and refuel.
So far I have made the oatmeal breakfast pie and drizzled nut butter and a little crumbles on top too (oops). Then the breakfast burrito and a red curry dish. I already want to recreate all of these meals after the 21 days are over.
