4-ingredient Raw Almond Butter Cookies? I know, this is really exciting stuff for a Tuesday.
These cookies were so easy to make. There was no oven required, no kitchen aid, no 10+ ingredients and 2 bowls to mix it all together.

All you need are these 4 ingredients: raw almonds, pitted dates (I didn’t soak them), Barney Butter Bare Almond Butter and vanilla extract. Then you will need your favorite Food Processor, who plays a key role in making these cookies (since it does all the work).

I will absolutely be making these 4-ingredient Raw Almond Butter Cookies when I am craving something sweet, a little salty and only have a few minutes to prepare. I have a feeling they are now a staple in my fridge, kind of like bliss balls. They are also packed with protein, fiber and healthy fats making them an awesome pre or post workout fuel if you are on the run.
Besides raw recipes usually being super clean, I also love the minimal clean up afterwards. There are no mixing bowls or baking dishes, just a food processor. I try to always make my recipes as simple as possible but this really takes the cake (or cookie in this case).
- 1 cup of raw almonds
- 1/2 cup of creamy almond butter
- 1 cup of pitted dates
- Splash of vanilla extract
- Place raw almonds in food processor and pulse until smooth, flour consistency (about 2 minutes)
- Add almond butter, dates and vanilla extract to food processor
- Pulse all ingredients until dough forms (about 2-3 minutes)
- Line a baking tray with parchment paper
- Begin add dollops of the dough to the tray
- Press down with a fork to make the lines in the cookies
- Place in fridge to let form for 30 minutes
- Store in fridge for up to a week
