    If you are craving a super fudgey brownie, you are in for a treat my friends.

    I am sharing these Gluten-free Nutella Fudge Brownies today on the blog and they are pretty much a game changer if you ask me.

    For starters they are completely vegan, gluten-free and have no added sugar in them besides the chocolate chips! They are definitely not on the sweet side so if you’re looking for a lower sugar dessert option, I gotcha covered with these bad boys. Extra fudge, no sugar but still a ton of flavor.

    I love keeping these in the freezer and eating them frozen and also when they are super hot and the chocolate gets all melty and dreamy on top. I like to call that a win-win in my book.

    Let’s chat about what these brownies are made of though. We use a base of flax eggs (pasture-raised eggs definitely work too), coconut oil and some creamy hazelnut butter and REBBL’s New Hazelnut Chocolate Protein (think nutella in liquid coconut milk form without all of the sugar).     I am pretty sure many of my recipes are also Passover-approved but since it is right around the corner, I wanted to make something especially for the holiday.

    I am never into the desserts served at the seder that are store bought. They end up tasting like cardboard in my opinion and after my dinner, I want and crave something indulgent and rich and goooood.

    These Grain-free Chocolate Chip Brownies are just that. They are made with wholesome ingredients like almond butter, eggs, sweetened with maple syrup and they are filled with Enjoy Life Foods Dark Chocolate Morsels for the ultimate fudgey brownie.

    I made these brownies on a whim when my Mom put me in charge of dessert duty for our family’s seder. Ezra’s first Passover and granted he can’t taste these but I like to think he will through my milk supply 😉 I cannot wait for one day when he can actually enjoy some treats with me.

    Whether you are celebrating Passover or Easter or just find this recipe in the middle of the year, I promise this brownies will satisfy your chocolate craving and sweet tooth. I love that they are made with just a few ingredients and they are dairy-free, gluten-free and grain-free. Adding in Enjoy Life Food’s Dark Chocolate Morsels really just tops of the recipe in my opinion.     Remember when we made those Gluten-Free Chocolate Chip Cookie Brownies aka “brookies” and everyone started to go crazy?!

    Ya, we are back today with a NEW brookie recipe for you. Except this time there are a few new twists on the original recipe I shared.

    For starters, this recipe is about 85% brownie and 15% cookie. I wanted to make something a little more decadent and chocolate-y than the usually half cookie/half brownie portion in a brownie cookie recipe. Plus the brownie in this is a lot fudgier than usual. It’s almost like a moist cake of sorts and when you bake it in cupcake/muffin form, it really makes it even more cakey than I imagined – I am obsessed!

    The brownie in this is also grain-free, gluten-free and dairy-free. I use a mix of almond flour, cacao powder and melted dark chocolate (along with a couple other goods) to get that extra dense and chocolate-flavor.

    But now let’s chat about the peanut butter cookie topping. Some may say this is “cheating” but I personally think this is one of the smartest baking hacks ever. As someone who spends a lot of time in the kitchen testing all different things, I love making most things from scratch. But there also comes a time when you are in a rush or just don’t feel like making cookies from scratch and I don’t blame you.     I had no intention of making these brownies to share with you guys today. In fact I had another recipe idea for this post but when it came time to baking, I was all about brownies (again). I have been on a brownie kick for what feels like months but I’m pretty sure it’s the best time of year to eat too many brownies and bake too many chocolatey treats, ya know?

    These One-Bowl Healthy Vegan Brownies are topping with an easy Peanut Butter Frosting for what may be the best dayum brownie combination of all times. A thick chocolatey brownie cake on the bottom topped with a rich and peanut buttery spread on top.

    I love that these brownies are made in just one bowl. Aka less mess since we are also making frosting here and I didn’t want us to clean up a million bowls. These brownies are also gluten-free, vegan and made with just 6 key ingredients. We use gluten-free oat flour, cacao powder, non-dairy milk and my favorite to add to brownies – melted dark chocolate chips or chunks. Such an easy way to get extra rich chocolatey flavor all up in the brownies and it makes them even more *moist*.

    The peanut butter frosting is made with 4 ingredients like full-fat coconut milk, creamy peanut butter, tapioca flour (a must) and it’s sweetened with manuka honey making this frosting refined sugar-free. I use Wedderspoon’s Manuka Honey (obviously) and peanut butter to make the frosting. The tapioca flour cannot be subbed for anything other than arrowroot flour because it needs the thickening type of flour.

    I made these brownies and served them to some friends and fam (or I would have housed the entire batch) and everyone was saying they are a mix of brownies and devil’s food cake. Best compliment I have gotten all day! Continue Reading

    I first had a “brookie” when I was in college. For those of you scratching your head questioning what that even means, not to worry – it is a funny name for a brownie and cookie layered bar. Think fudgey brownie bottom layer topped with a chocolate chip cookie. It is a double whammy of straight up dessert heaven.

    To be honest I am surprised it took me this long to share a homemade brownie cookie recipe but these Gluten-free Chocolate Chip Cookie Brownies were well worth the wait. I knew I wanted to make them as delicious and easy to make as possible. Thinking about making a brownie cookie bar also just makes me think of a recipe with double the clean up, but these are so simple and I promise your kitchen won’t look like a bomb went off when you pop these in the oven.

    The bottom brownie layer is made with pasture-raised eggs (or you can sub flax egg!), coconut oil, unsweetened applesauce, almond flour and cacao powder. Plus a melted bowl of dark chocolate chips that make the brownies extra rich and flavorful. Then the top cookie dough layer uses almond flour, coconut flour, egg, coconut oil and some delicious dark chocolate chips that oh so perfectly melt right on top.

    For the coconut oil in this recipe, I use Garden of Life’s Organic Extra Virgin Coconut Oil. This is one of my biggest pantry staples. I use it for so many recipes and also keep extra jars in my bathroom and bedroom for non-baking related things. I love that you can melt the coconut oil in the microwave so easily to get it to liquid form (what we do here) then just wait a couple minutes for it to cool before baking with. Continue Reading

    Right now (and usually) I choose the later. Especially now that this Paleo Deep Dish Double Chocolate Chunk Brownie recipe is finally here and on the blog!

    With so many of us having holiday entertaining and parties to go to, it can be overwhelming and stressful trying to find the “perfect” dessert recipe to bring with you. I obviously think any dessert from the blog to whip up but if you really want something that will freak out your chocolate lovers and have everyone swooning, this recipe is calling your name.

    Brownies are the best no matter which way you slice it, but when they are double the thickness and double the amount of chocolate as your usual brownie, they tend to overpower other recipes.

    This Paleo Deep Dish Double Chocolate Chunk Brownie is made with simple ingredients like coconut oil, unsweetened applesauce, almond flour and has zero refined sugars in it. I use coconut sugar in the mix and for the chocolate, we are baking with Hu Kitchen’s dark chocolate bars (duh). My go-to refined sugar-free option always. And you can really use any of their flavors in this. I personally think the Salty Dark Chocolate is best in this recipe to keep things simple, but if you have the Cashew Butter & Vanilla Bean on hand – go for it! It will taste delicious.
