    It has been awhile since we made any muffins on the blog and I am currently eating one these with nut butter on top as I am writing this blog post. My new thing is to eat the recipe while I write the post so it is as “in the moment” as possible. Multi-tasking at its best.

    I am back again with a carrot cake recipe to win over your hearts and stomaches.

    Considering that carrot cake recipes are the only way I will eat carrots, I am constantly on a mission to whip up some new an delicious recipes using carrots. These healthy bakery-style muffins are honestly amazing and SO easy to make.

    They are gluten and dairy-free and made with just a few ingredients. They were inspired by my Bakery-Style Banana Spice Muffins, which have been one of the most popular recipes on the blog. What I love about these muffins is how cake-y they are on the inside and have a crunchy muffin top (except you won’t get a muffin top from these, haha!).

    I also added some Manitoba Harvest Hemp Hearts to the batter for an extra boost. We spoke about hemp hearts in these Fatty Avocado Cookies and Dark Chocolate Coconut Macaroons and have seen how versatile hemp hearts are! I used Manitoba Harvest and they have a ton of hemp varieties. Anything from favored hemp seeds to hemp protein (so yummy) and hemp oil. Their hemp hearts add 10-grams of plant-based protein per 30-gram serving (3 tablespoons) and they’re lower in carbs.

    There’s no need to grind or cook Hemp Hearts either. They are ready to eat from the bag and you can incorporate to any recipe so easily!

    Manitoba Harvest is the world’s largest manufacture to grow, make and sell hemp foods. They control everything from what hemp seeds get planted to how products are manufactured, packaged and distributed!

    I AM SO EXCITED ABOUT THESE MUFFINS.

    Excuse my all caps but seriously these muffins are my personal top 5 favorite recipe ever on the blog. They are on point taste wise and they actually came out perfect on the first try. Something that rarely ever happens considering I tried making a galette today and wasted one too many ingredients I am sick even thinking about.

    These muffins though. They are a Healthy Bakery Style Banana Spice Muffin that won’t give you no muffin top that’s fo SHO. They are made with all clean ingredients, and they are gluten and dairy-free.

    They also have one of my favorite beverages ever in them, REBBL. REBBL is serious GOALS. That likely doesn’t make sense to you but when I think of REBBL, I think of calm, spiritual, zen, good-for-you goods, tons of herbs and nutrients.     I think these Cinnamon-Spiced Chocolate Chunk Banana Muffins have to be the most challenging recipe I have ever made. I thought that those Flourless Oatmeal Cookie Carmelita Bars were, but I was wrong, very very wrong.

    These muffins are free of the top 8 most common allergens: eggs, wheat, soy, tree nuts, peanuts, dairy, fish and shellfish. Aka the top 8 most common foods I eat (oops). As you see on the blog, nuts and eggs play a prettyyyy large role in my diet. Especially since many of my recipes are made with almond and coconut flours and I basically bathe myself in coconut oil daily.

    This is also the most allergy-friendly recipe I have ever made. I used gluten-free baking flour, banana, chia egg, maple syrup and a few other baking staples. I used Enjoy Life Foods Mega Chunks for the sweet chocolatey goodness in these too.  Continue Reading

    Peanut Butter Cup Banana Bread Muffins. These may be a mouthful to say but just wait until you are eating one of these chocolate peanut butter banana muffins from heaven. You will probably go nuts.. just saying.

    Working out in the morning is one of my favorite parts of my day. I usually work out around 9:30am (the luxury of working for myself). This allows me to take my time in the morning and have a leisurely breakfast, work a little then head out the door to a class. I also even go to the grocery store to pick up any necessities for recipes that day first before heading to work out. Can you tell I like to accomplish a lot in the morning yet?

    My work outs usually consist of a barre or spin class. Those have been my two favorite forms of workouts for the past few months. Spin is usually how Jord and I exercise together, and barre is my go-to for solo time or with friends. Continue Reading
