    Hope no one is sick of carrot cake recipes yet because these newĀ Chocolate Chunk Oatmeal Cookie Carrot Cake Bars are officially one of my new favorite recipes to make on the blog. Ya baby – I said it!

    They are lightly sweetened (just a little maple syrup in the batter), gluten-free, dairy-free and have zero refined sugar in them. Plus we use a mix of almond flour, rolled oats, oat flour for the flours here. I love doing a mix of both almond and oat for this because it makes them a bit more filling and the consistency is on point. Sometimes I find that baking with only grain-free flours leave the consistency a bit too moist, so adding oats really helps!

    These bars are almost like an oatmeal cookie or oatmeal bake you’d enjoy in the morning. I personally liked eating these for breakfast more than dessert and paired them with yogurt, nut butter and fresh fruit! You can also freeze them too if you want to save any for later, but that likely won’t happen once you try these šŸ˜‰

    I used Hu Kitchen’s dark chocolate bar and cut it into chunks for the chocolatey sweetness here. Slice up one or two (I prefer two, duh!) and mix some in the batter and then sprinkle some on top for that extra chocolatey goodness. Continue Reading

    I have a feeling you guys are going to goĀ crazy for this recipe.

    First of all it is ready in 2 minutes. Second of all is tastes like brownie batter and we are eating it forĀ breakfast. And lastly, there is barely any clean up since it is made in the microwave!

    All you need are a few easy ingredients that you likely have on hand already. We combine gluten-free rolled oats, mashed banana, egg, flaxseed, cacao powder and some nut milk to make the oatmeal batter. Mixed with some dark chocolate chips and dollop of nut butter on top – it isĀ heavenly!

    This recipe does serve two people so feel free to split it with a friend, roommate or just save the other half for later. I recommend eating this recipe while warm and fresh out of the microwave so if you make it ahead of time, definitely reheat before eating so you get the full brownie batter taste!

    It feels like forever ago since I have shared a baked oatmeal recipe with you guys!

    Oatmeal bakes were actually one of the first recipes I used to make when I started experimenting in the kitchen. I loved how it combined a little cake-like dish with oatmeal for breakfast and how easy they are to make. I used to just toss in any mix-in’s and things we had in the fridge or pantry and make so many different types of baked oatmeals.

    This one though is hands down my favorite. I guess it could be because it has a bit of a banana bread theme (shocker) and I also think the ratio of oats to the other ingredients used are on point. It just soft on the inside and the outside has a little crunchy edge and “crust” of sorts.

    The best part about this recipe though? It is ready in just 25 minutes and you’ll get 4-5 servings out of it so you are set for the week! I love adding a slice to my breakfast plate with some coconut yogurt, fresh fruit and granola on top. It feels like I’m eating cake for breakfast or a big oatmeal cookie of sorts.     You can find me eating a bowl of warm oats anytime of the year but especially in the dead of winter. There is something so comforting and cozy about having oats during the day. Sure they are a breakfast classic but I sometimes make oatmeal for lunch or a snack during the day.

    It took me years of making oatmeal and trying different variations to finally perfect how to make the best creamy stovetop oatmeal. The method I am sharing with you guys today is super simple and there is no prep work involved. You can make these when the craving hits and they’ll be ready in less than 10 minutes – it’s that easy.

    There are a few key ingredients that make the oatmeal in this recipe extra special. For starters I don’t use water to make them but instead use non-dairy milk. This makes them so much creamier and more flavorful. Water totally works if you don’t have a milk option but I do recommend trying it with milk when you can! You can use any kind you’d like. I love using almond, coconut, cashew, anything.

    Once the oats are cooking for a few minutes you add in a little mashed banana (save the rest of the banana for topping!). This adds some extra sweetness to the oatmeal without adding any refined sugars. I also sprinkle in some cinnamon because I am addicted to cinnamon. Completely addicted! Continue Reading

    We’re in full out holiday season friends aka we’re in a dessert marathon right now making and eating all the things over here.

    Not like it has to be the holiday season to make an epic truffle, but the dessert views on the blog skyrocket during the holidays so I want to make sure I have you guys covered with all the goods to choose from this year!

    These Vegan Chocolate Chip Oatmeal Cookie Truffles are such a simple and easy dessert to whip up and make for friends as gifts, bring to a holiday party or get-to-together or just make for yourself when you are craving something real good.

    And the best part? These truffle bars call for 5 ingredients total, including the chocolate coating! It is insane how easy they are and they are no-bake, gluten-free and you can pop few in your mouth without feeling blah afterwards.     There is no such thing as too many cookie recipes. Especially during baking session aka right now. Except I have been in baking session for the past three months testing all the holiday cookies and treats for you guys!

    I love testing new recipes for you to enjoy and whip up, but I also love putting a healthy spin on a classic like we are in theseĀ Chocolate Chunk Oatmeal Cookies. They are the easiest oatmeal cookie ever to make and they’re gluten-free, egg-free and have no refined sugar in them (heck YES!).

    I also add an extra boost in these cookies with collagen peptides. You guys know how much I love to sneak collagen peptides into my recipes, especially baking!
