    I mean, is there ever a time that banana bread isn’t the most satisfying flavor combination imaginable? Especially when we’re talking all things breakfast.

    Toady we are making the easiest 6-ingredient Paleo Banana Breakfast Pudding and it has been on the weekly rotation over here. When I gave some to J for breakfast, he called me from work asking where I bought it from. I could have been insulted by that comment but instead took that as a compliment that he really was enjoying it.

    I like to think of this as a paleo/grain-free oatmeal meets pudding type of recipe. It is so simple and easy to make and is very filling and satisfying for breakfast. Plus you can whip up a big batch and enjoy it throughout the week.

    I use a base of nut milk, banana, almond flour, coconut flakes, flaxseeds and collagen peptides for some extra protein. I find that if I don’t have just the right combo of fat, carbs and protein in the morning, I’m starving in an hour. For this recipe I love to use Vital Protein’s Mocha Collagen Creamer. The smell of that creamer alone has me drooling. Being someone who isn’t a fan of coffee, I was hesitant on buying their creamers but now I love baking with them and using them in my oatmeal.     When the only way you’ll eat carrots is when their hidden in a dessert, you have to get creative in the kitchen 😉 And this Gluten-free Pecan Carrot Cookie Cake is absolutely insane and officially my go-to dessert right now. It isn’t often a dessert recipe satisfies me that doesn’t have chocolate in it but this recipe hits the spot.

    This carrot cookie cake has a crunchy outside and that soft gooey cookie center we all love. Plus you can top it off with some ice cream of choice or even some creamy coconut yogurt for a little fancy snack or dessert actions.

    Did I mention you only need to dirty one bowl to make this recipe too? Easy prep, easy clean up and you are set.

    I also add in some of my favorite Vital Protein’s collagen peptides. You guys know my obsession with collagen peptides and baking with it. I love sneaking it into recipes because it adds extra protein and dissolves right into the batter. I use the regular collagen peptides here so it doesn’t add any flavor either.     Do-nut even get me started on my recent craze over all things DONUTS.

    A few years ago when I first bought a donut pan, I questioned my impulse decision after ordering. I didn’t think I’d actually ever use it and now I find myself using this pan so much, I want to buy more so I can make bigger batches of donuts and bagels!

    This is healthy spin on the classic cinnamon sugar donut. It is a basic and very simple recipe to make and will take all of 15 minutes start to finish to whip them up. I love that they are sweetened with a little coconut sugar, have unsweetened applesauce in them for that moist consistency and I even snuck in some Vital Proteins collagen when I made them. The first time I used their collagen creamer (so good) and the second time I used the collagen peptides since it is all I had on hand.

    I love sneaking in Vital Protein’s collagen into random recipes as you guys know. It adds more collagen and protein to a recipe and it doesn’t bulk it up or anything like your usual protein powder. It dissolves right in the batter when you bake with it (more on collagen here).

    The consistency of these donuts is my favorite. They are perfectly cakey and not too heavy. I personally find some healthier donuts pretty dense but these aren’t at all. They are also egg-free, nut-free and gluten-free so very allergy-friendly for all my friends out there looking for something to bake for friends, family or let’s be real – yourself because that is usually what even instigates me to start baking 😉 Continue Reading

    It feels like forever ago since I have shared a baked oatmeal recipe with you guys!

    Oatmeal bakes were actually one of the first recipes I used to make when I started experimenting in the kitchen. I loved how it combined a little cake-like dish with oatmeal for breakfast and how easy they are to make. I used to just toss in any mix-in’s and things we had in the fridge or pantry and make so many different types of baked oatmeals.

    This one though is hands down my favorite. I guess it could be because it has a bit of a banana bread theme (shocker) and I also think the ratio of oats to the other ingredients used are on point. It just soft on the inside and the outside has a little crunchy edge and “crust” of sorts.

    The best part about this recipe though? It is ready in just 25 minutes and you’ll get 4-5 servings out of it so you are set for the week! I love adding a slice to my breakfast plate with some coconut yogurt, fresh fruit and granola on top. It feels like I’m eating cake for breakfast or a big oatmeal cookie of sorts.     You can find me eating a bowl of warm oats anytime of the year but especially in the dead of winter. There is something so comforting and cozy about having oats during the day. Sure they are a breakfast classic but I sometimes make oatmeal for lunch or a snack during the day.

    It took me years of making oatmeal and trying different variations to finally perfect how to make the best creamy stovetop oatmeal. The method I am sharing with you guys today is super simple and there is no prep work involved. You can make these when the craving hits and they’ll be ready in less than 10 minutes – it’s that easy.

    There are a few key ingredients that make the oatmeal in this recipe extra special. For starters I don’t use water to make them but instead use non-dairy milk. This makes them so much creamier and more flavorful. Water totally works if you don’t have a milk option but I do recommend trying it with milk when you can! You can use any kind you’d like. I love using almond, coconut, cashew, anything.

    Once the oats are cooking for a few minutes you add in a little mashed banana (save the rest of the banana for topping!). This adds some extra sweetness to the oatmeal without adding any refined sugars. I also sprinkle in some cinnamon because I am addicted to cinnamon. Completely addicted! Continue Reading
