This post is all about my beautiful Mama, the best baker I know. She is not one who loves to bake or cook or experiment with new recipes but she sure does an amazing job. I grew up with home cooked meals, packed lunches for school, delicious sweets always in the house and the expectation that my Mom would be making us dinner every night. We all have our favorite treats that remind us of home and our childhood. When you say Mandel Bread, Banana Bread and Hanukkah cookies (I am 100% aware not many say Hanukkah cookies) my first thought is my Mama’s fabulous recipes.
Besides those CLASSICS, she also recently started making these Apple Blondies. They are made with fresh apples, coconut sugar and they’re absolutely perfect for Fall. They are soft, gooey and sticky and everything I love in a seasonal treat. I also love my desserts cold and this is usually kept in the fridge (makes for a better nut milk companion when the dessert is cold).
As a self proclaimed apple connoisseur, these are top notch when it comes to baking something delicious during apple season. Apple pie doesn’t do it for me so these Apple Blondies, oh my gosh, they hit the spot.
- 2/3 cup of grass fed butter
- 1/2 cup of brown sugar
- 1 cup of coconut sugar
- 2 free range eggs
- 1 tsp vanilla
- 1/2 cup nuts (walnuts or pecans)
- 2 cups flour
- 2 tsp baking powder
- 1 cup of organic chopped apples
- Preheat oven 350 degrees
- Grease 9x13 pan
- Cream butter and sugar
- Add eggs and vanilla
- Add flour and baking powder, stir well
- Stir apples and nuts
- Pour onto pan and bake for 30-35 minutes
