Creamy Vegan Banana Nut Ice Cream topped with extra crunch & extra protein.
A few years ago I started freezing my bananas and then blending them after dinner with peanut butter, dark chocolate and a splash of almond milk.
Fast forward 4 years later and it is now a “thing” that people make. Banana “nice cream” you may know it as. It has become much more popular and commonly found in many vegan and organic cafes. It’s such a delicious go-to snack or sweet treat to start or end your day with.
Today we are here to further enhance Vegan Banana Ice Cream and take it to the next level. The whole “new year, new you” concept is in full fledge and we all need some new healthy yet delicious recipe ideas to keep us motivated and on track for a healthy new year. A handful of people asked me if I had any new year resolutions and told me about their new “diets” and exercise routines they plan to start this year. I’m no nutritionist or health coach, but this isn’t about a diet, it is about a lifestyle. I taught myself what/how to eat with trial and error (don’t be deceived there were many errors on the way to my current eating and fitness lifestyle). I don’t follow a meal plan or something that someone tells me to do, I listen to myself and my body and what works for me. I strive for wholesome recipes that require minimal ingredients and don’t call for white flour, sugar and limited dairy (besides pizza and some yogurt) because that is what works for me.

frozen bananas

Cinnamon
And of course your blender or Nutribullet.

Vegan Banana Nut Ice Cream
Ingredients
- 2 small frozen bananas
- 1 scoop of AboutTime vegan vanilla protein
- 1/2 cup of unsweetened vanilla almond milk
- 2 tablespoons of maple cashew butter
- Cinnamon
- Cashews
- Walnuts
Directions
- Place frozen bananas, protein powder, almond milk and maple cashew butter in nutribullet or blender
- Blend until smooth/ice cream consistency
- Pour into bowl or cup of choice and top with walnuts, cashews and cinnamon
