    It’s no secret I have a thing for bananas. Pretty much anything banana related has my name all over it. Banana bread, banana muffins, banana ice cream, you name it. I’m also pretty sure the Whole Foods cashiers think I am borderline insane because I buy a bundle of bananas every couple of days. Then there is the art form of picking out what bananas to even by because you don’t want them too ripe but you don’t want to buy ones that are going to turn brown immediately. I stand there for a few minutes every time picking out which ones are just “perfect”.

    In conclusion, you can see my love and dedication for bananas runs deep. This brings me to our new dessert, a Caramelized Banana Split Sundae for Two. So call friend, lover, your Mom, literally anyone and get going on this modern day sundae.

    Lately I have been obsessed with caramelizing my bananas, which sounds 100x more fancy than it actually is. It also tastes a lot more indulgent than it is. As you will see in the recipe below, all you need to do is sauté the banana in a little coconut oil and it turns out amazing. And this in your next ice cream sundae is just too die for.

    The caramelizing of fruit doesn’t stop at bananas either here. I also “roasted” the strawberries in the pan afterwards and um, you babes are going to go NUTS over them.

    After getting all fancy with our fruit, we top it with Ciao Bella Dark Cocoa Sorbetto, crushed peanuts, dark chocolate sauce and sprinkles (duh). And would you believe me if I said this dessert is pretty much all plant-based and gluten-free? Yup, it’s the miracle sundae if you ask me.

    When I took my first bite, I obviously had to get a piece of banana, strawberry, ice cream, chocolate, peanuts and sprinkles all on the spoon. As soon as I had it, I was in HEAVEN. And then I remembered I had to share with Jord, oopsies. Kind of a romantic-ish way to eat dessert except I look like a pig and have chocolate ice cream all over my face afterwards.

    Caramelized Banana Split Sundae for Two

    Cook Time 10 mins
    Total Time 15 mins
    Yields 2

    Ingredients

    • 1 ripe banana
    • 1/2 cup organic strawberries (I recommend fresh not frozen)
    • 1/2 pint of Ciao Bella Dark Cocoa Sorbetto
    • 2 tablespoons unsalted peanuts
    • 2 tablespoons dark chocolate sauce (or melted dark chocolate chips)
    • Optional: rainbow sprinkles

    Directions

    1. Grease a small pan with coconut oil and heat to medium heat
    2. Split banana in half and sauté gently on the pan, making sure the banana caramelizes on each side
    3. Once done, set aside on plate
    4. Add strawberries to same pan and sauté for 2-3 minutes, add to same plate with bananas
    5. Add Ciao Bella Sorbetto on top
    6. Sprinkle unsalted peanuts, drizzle chocolate sauce and add sprinkles
    7. Enjoy immediately!

    Once you’ve caramelized bananas, you can never go back! I’m seriously obsessed with having them on toast, but oh my gosh in a banana split! Way to make an amazing classic dessert even dreamier!!! And woah, that sorbet looks seriously chocolatey and rich. I’m always worried that sorbets will be too icy, but there seems to be no lack of satisfaction here! I’ll have to keep an eye out next time I’m at the store.
