Comment on Chickpea Salad Stuffed Avocados (vegan, gluten-free) by Valencia @ Life of a Vegaholic.

As a vegetarian, I know exactly where you are coming from. Packing lunches aren’t exactly a walk in the park. I love chickpeas and making chickpea salads. They are so fun to make in my opinion. This is such a great lunch idea.

I’m a sucker for a recipe with Smoked Salmon. Ahhh, I love it so freaking much!

Veggie-Loaded Butternut Squash Pesto Pizza (vegan & grain-free)
I absolutely LOVE butternut squash. It’s definitely my fall jam. Haha! It’s SO good! This looks like a great appetizer 🙂

    10-minute Pad Thai Zoodles (gluten-free & vegan-friendly)
I love this plant based twist on one of my favorite dishes. I haven’t had Pad Thai in what seems like forever so this post is making me want some Pad Thai in my life. I understand that Thai food is for an acquired taste and that the spices as well as the sauces can bit a much for some. I still can’t believe that you don’t like Thai food, but I guess we are still cool haha 🙂

Southwestern Tortellini Salad from Hello Fresh
Meal planning and grocery shopping can be a bit of a drag sometimes. Haha! I’ve seen commercials on television for HelloFresh. A family member of mine told me about Blue Apron, so I recently opted to try them out. I’ve never really been into the “meal delivery” craze just because I’m a very selective eater with certain food restrictions. Also, I don’t like the thought of someone giving me a vague description of what I’m going to be having. I like to know exactly what I’m going to be having before I have it. I’m supposed to be getting my first box very soon and I will most likely talk about my experience on my blog, Life of a Vegaholic.
