    I didn’t think my love for peanut butter and chocolate could run any more deep..

    That is until I made this Dark Chocolate Peanut Butter Cup Bark. Also I am just going to put this out now, this bark is seriously ADDICTING. One piece just isn’t enough. Plus it calls for only THREE ingredients, yes THREE ingredients people.

    It is hands down the easiest dessert we have made yet. Not to mention it just looks gorgeous when you make it, I mean just look at that swirl..

    I’m sure you can easily guess the three ingredients we use here. A dark chocolate baking bar, peanut butter chips and dark chocolate chips. For both the dark chocolate baking bar and dark chocolate chips, I used Lily’s Sweets. I have been an avid Lily’s Sweets customer now for quite some time. They first caught my eye in the baking eye with their bold colors, I loved them. I find them in my local Whole Foods and absolutely love using their chips and bars in my recipes!

    It wasn’t until recently I really learned more about Lily’s Sweets and the brand story. I was seriously moved by why they started and who Lily even was. And no, the founder’s name isn’t Lily. Lily is an inspirational young girl who is also a brain cancer survivor. Lily’s Uncle Chuck and his friend Cynthia teamed up to create a plant-based sweetened chocolate that everyone can enjoy! They made their uniquely delicious stevia-sweetened chocolate bars, chips and more and Lily loved them! Lily’s Sweets was named after Chuck’s niece, Lily, who was diagnosed with brain cancer at the age of 7. Having to watch her sugar in-take during this time, Lily turned to these chocolates as her candy and dessert! She is now 13 and celebrated her 5-year anniversary of diagnosis and remains cancer-free, YAY!

    Lily is dedicated to helping others in need and she raises money for other kids battling cancer. Lily’s Sweets contributes a percentage of their profits each year to non-profit organizations that provide services to children with cancer and their families. It is just so truly touching to see a brand we love give back and try to make a difference in our people’s lives. When I heard this story, I felt so proud to help in someway just by purchasing Lily’s Sweets.

    Lily’s Sweets is also committed to operating ethically and sustainable. It’s products are made with a smooth blend of decadent chocolate that is certified Fair Trade. Plus it is also all non-GMO and gluten-free and some are vegan-friendly.

    Being able to partner with brands who stand for a good cause and were founded based off an amazing story, inspire me so much. When I heard this story of Lily, I was so moved and loved going to purchase their products even more. Knowing that when we buy Lily’s Sweets we are also giving back, is just an amazing feeling!

    Plus it just makes this Dark Chocolate Peanut Butter Cup Bark even sweeter. I recommend keeping this in the freezer. And try not to eat the whole thing in two days. My Mom asks me to save her some and um, let’s just say there was nothing left after a day or so in our freezer. Kind of like when I make these Mini Dark Chocolate Peanut Butter Protein Cups.

    Dark Chocolate Peanut Butter Cup Bark

    Prep Time 10 mins
    Cook Time 1 hour
    Total Time 1 hr 10 mins

    Ingredients

    • 2 8 ounce Lily's Dark Chocolate Premium Baking Bar
    • 1 cup of peanut butter chips (I found these in the baking aisle)
    • 2 tablespoons dark chocolate chips (I used Lily's too)

    Directions

    1. Line a baking tray with parchment paper and spray with coconut oil to grease
    2. Break up the baking bars into pieces and place into microwave safe bowl
    3. Put in microwave for 1 minute, stirring after 30 seconds
    4. Stir chocolate so it continues to melt and set aside (if you have trouble melting add just a little coconut oil, you DO NOT want to add this unless you have to or the bark won't harden well)
    5. Add peanut butter chips to a new microwave safe bowl
    6. Put in microwave for 1 minute, stirring after 30 seconds
    7. Pour melted dark chocolate onto the parchment paper and us a spatula to spread around evenly, it won't fill the whole tray but a large portion in the center
    8. Next add dollops of the melted peanut butter chips on top of the melted chocolate, spread apart
    9. Using a toothpick or something similar, gently swirl together the peanut butter and chocolate in a circular motion
    10. Top with extra peanut butter chips and dark chocolate chips if you'd like and place in fridge for 1-2 hours, or until set

    LOVE Lily’s bars! They’re my favorite! So is this combo of chocolate and peanut butter. Bark is probably the best and easiest thing to make ever, love it!
