Raise your hand if you are currently sweating, craving something sweet and want to eat in less than 5 minutes?

That’s me every single day lately. I’m not complaining about the heat because to be honest, I love it but I do not love turning my oven on and eating hot food when there is sweat dripping down my face.

These Frozen Nut Butter Stuffed Dates have been my go-to snack for the past few weeks and I have a feeling this craze isn’t going anywhere. I kept seeing all my prego friends stuffing their faces with dates (supposed to help with labor) and it had me craving some. They are also a game changer for anyone who wants a little extra help going to the bathroom (TMI but whatever).

I have been mixing together some nut butter, plant-based protein and manuka honey then stuffing dates with it and sprinkling some chocolate on top. Then I pop them in the freezer so I have a sweet snack or little dessert for after lunch time.

I love that just a couple of these satisfy my sweet tooth craving. Yes they have both dates and manuka honey in them but I do add some protein powder to help balance it out a bit. Plus if I am going to eat something sweet, it’s going to come from a natural sugar source that is unrefined. All my no-bake desserts and snacks are always sweetened with Wedderspoon’s manuka honey. You guys have been loving those Paleo Twix Bars, Tahini Freezer Bars and Peanut Butter Truffle Bars (to name a few) all using Wedderspoon.

You can find Wedderspoon’s manuka honey in your local grocery store or stock up online. A little goes a long way so the bottle will last you awhile!

Instructions

  1. Slice each date in half and press down a bit to open them up
  2. In a bowl, mix together the nut butter, protein powder and honey (or you can blend!)
  3. Fill each date with the nut butter mixture and top with chocolate chunks
  4. Place in freezer (I put in a large tupperware) and store until you are ready to snack!

Notes

These stay good in the freezer for up to two months!
