Can you tell that I love peanut butter & jelly yet? This Peanut Butter and Jelly Chia Seed Pudding is taking PB&J to a whole new level.
At this point we have made Peanut Butter & Jelly Overnight Oats as well as my most recent PB&J Stuffed French Toast Skewers on the blog. Then there’s that whole classic PB&J sandwich that I make for lunch more than I care to admit.
When I was working in an office (aka not alone out of my kitchen), I used to pack PB&J, waffles with nut butter and banana, all types of overnight oats, puddings and more to bring to work. People looked at me like I was literally nuts. I had no shame. No one can come between my love for all things PB&J related.
I am basically trying to find every possible way to enjoy this classic combination in addition to sandwich form. I am sensing some PB&J cookies, granola and maybe a banana bread in the future? Oh my gosh, I know.
Now a huge part of PB&J is the type of peanut butter and jelly you use. It really can make or break it for you. I am not biased to any jelly but strawberry is usually what I have on hand. I love making my own chia seed jam, but we don’t always have the time for that. And with so many various peanut butters in the world these days, the possibilities are pretty endless. Creamy, crunch, chocolate, flax seed, etc.
For this Peanut Butter and Jelly Chia Seed Pudding, I went with two classics:
For a little extra something, I added fresh strawberries & unsalted peanuts on top, which I highly recommend. You will also need your favorite nut milk, chia seeds, and powdered peanut butter (enhances the PB flavor) when making this pudding.
- 1 cup unsweetened almond milk
- 3 tablespoons chia seeds
- 1.5 tablespoons powdered peanut butter
- 1 tablespoon creamy peanut butter
- 1 tablespoon strawberry jelly
- Optional: sliced strawberries & unsalted peanuts
- First place almond milk, chia seeds and powdered peanut butter into your tupperware or mason jar (note: you can also blend this as well first)
- Place in the fridge for 3-5 hours or overnight
- Top with peanut butter, jelly, strawberries & unsalted peanuts
