3-ingredient Raw Pecan Brownies made with all paleo, vegan, gluten & guilt-free ingredients

 

Um, yes 3-ingredient Raw Pecan Brownies are happening right now.

I recently asked my Instagram fam what recipes they wanted to see more of. A handful of you are replying with “healthy brownies” and “chocolate recipes“. No complaints there since I love both of those things!

Most people would think healthy brownies is an oxymoron but in this case, I think we nailed the definition of healthy brownies. And no there are no beans in here!

These 3-ingredient Raw Pecan Brownies clearly aren’t your traditional brownies baked in an oven and made with flour, eggs, etc. But in my opinion, they are so much better than that. These brownies won’t leave you feel like like a full lard or in a sugar coma because they are made with good-for-you ingredients and filled with nutrients. They are packed with healthy fats, fiber and even have a decent amount of protein.

I first became obsessed with raw brownies when I visited Hu Kitchen for the first time here in Manhattan 2 years ago. The use dates, almonds, cacao and I think sea salt to make them. They are so fudgey and rich, I am obsessed. Actually, that brownie was my first paleo dessert ever. I couldn’t believe how light I felt after and how I didn’t have that “sugar hangover” that rich desserts can give us. On my birthday, all I wanted was one with a candle in the middle (they are THAT amazing).

I use pecans instead of almonds in my 3-ingredient Raw Pecan Brownies, but you can really use any nut you wish. I also think walnuts will be delicious in this and maybe even peanuts (although peanuts would make them not paleo FYI).

All you need to make these raw brownies are pecans, cacao powder, pitted dates & your food processor. So freaking easy, I know.

Raw Pecan Brownies

Yield: 8 brownies 1x

Ingredients

Scale
  • 1 cup + 1/4 cup pecans
  • 1 cup pitted dates (soft)
  • 1/2 cup cacao powder

Instructions

  1. Pulse 1 cup pecans in food processor until broken
  2. Add cacao powder and pulse a couple times
  3. Add dates and pulse for a few minutes until dough is formed
  4. Form dough into 8×8 lined baking dish so it fits half (you can also double this recipe to make a full 8×8 size pan)
  5. Press in 1/4 cup of pecans across the top of the brownies
  6. Place in fridge for 15 minutes
  7. Will stay good for about a week in the fridge and a couple of months in freezer
