I’m not gonna lie, pasta is by fair my least favorite food. I’ve never felt that comfort feeling from eating a big bowl of linguini with clam sauce or raviolis with marina, it just isn’t for me. For my comfort hearty meal I’d rather overdose on pizza topped with arugula and balsamic glaze or my Mom’s matzo ball soup with challah on the side. To me that is a comfort food, but to most it’s that bowl of good old PASTA.
So since my husband (still giggling that I get to call Jord husband) is basically the biggest pasta lover I know, I had to find a happy medium of something he will enjoy and I will also enjoy. I would say we typically eat different meals 75% of the time which most people would say is nuts, but it works for us. I love to cook, he loves to cook and we help each other while we do. But with this Simple Vegetarian Pasta, we are both satisfied and the meal is ready SO quickly.
This Simply Vegetarian Pasta is made with 2 types of noodles and 1 jar of sauce, that is it. First I will chat about the “carb” noodles I used. For this recipe I like to use Banza which is a chick pea pasta. Literally the noodles are made out of chick peas and are absolutely amazing. There is 25 grams of protein in their noodles too, which is MUCH more than your typical serving of pasta.
The next noodle I use is my beloved ZOODLE! I am absolutely obsessed with zoodling. When I first bought a Spiralizer a few years ago, I was living at home with my parents and they looked at me like I was a complete alien. Now they are both zoodling with one. Seriously buy one if you don’t already own it, you will become obsessed. I ordered mine on Amazon and never looked back.
Now the third ingredient is one of my favorite go-to sauce companies, Mina. Mina makes the most delicious Harissa sauce which I made a Moroccan Quiona Bowl with a few months ago. Now I am using their Shakshuka sauce. You probably think of eggs when you hear Shakshuka which is totally what you use Shakshuka for, but there are SO many other uses for it too. From a pasta sauce, to on top of pizzas, as a dip, seriously the flavor bomb you get when you eat Mina Shakshuka is unreal.
Combine all three of these ingredients and your meal is DONE! Voila!
- 1 box of pasta of your choice (I used Banza chick pea)
- 2 medium zucchinis
- 1 cup of Mina Shakshuka
- Prepare pasta as instructed on the box
- Begin spiralizing your zucchinis then sauté with some olive oil over the stove
- Heat Shakshuka sauce on the stove for a few minutes (don't let it get too hot)
- Once zoodles and pasta are ready, place in a serving dish and mix in Shakshuka
