2-ingredient Egg Bites

These 2-ingredient Egg Bites are like the Starbucks sous vide egg bites except you can make them at home for less money and with better ingredients! And they are incredibly easy to make.

Yield: Makes 9-12 egg bites 1x

Ingredients

Scale
  • 8 large eggs
  • 1 cup ricotta cheese or cottage cheese
  • Sea salt and black pepper to taste

Instructions

  1. Preheat oven to 350 degrees F and spray a 12 slot silicone muffin tray with oil
  2. Add the eggs, cheese and salt and pepper to blender and blend until smooth
  3. Pour the eggs mixture into the muffin pan (fill each about 3/4 up)
  4. Carefully prepare the steam bath by placing a baking sheet on bottom rack of oven and pour water onto the baking sheet (fill about halfway) then place the muffin tin on top of the tray or on the rack above the muffin tray (either way works)
  5. Close the oven and bake for 25 minutes then remove muffin tin from oven and allow the egg bites to cool before removing from the muffin tin and enjoy!

Notes

*Store leftovers in fridge for 5 days or freezer for 2 months
