Sharing my 3-minute Sweet Potato Banana Cake for one made with grain-free and gluten-free ingredients for an easy and healthy breakfast, snack or dessert recipe.
It’s been a hot minute since I have shared a smaller portion recipe with you!
This Sweet Potato Banana Cake is gluten-free, grain-free and ready in just 3 minutes!
This cake is low in sugar too. In fact the only sugar added is with the banana for extra sweetness. Making this recipe 100% acceptable for really any time of the day. I love making it for breakfast or a mid-afternoon snack between lunch and dinner.
You also only need 7 ingredients to make it and no oven is needed! Just mix up all the goods in your favorite mug and pop that baby into the microwave.
For this recipe you’ll need simple ingredients like some mashed banana, sweet potato puree (or use pumpkin!) and non-dairy milk. I use coconut flour as the flour and haven’t yet tried any other flavors instead. But definitely let me know if you do!
I have made this recipe using this delicious sweet potato mash up instead of just sweet potato puree. And let me tell you, it is absolutely amazing in this!! Use my code RACHLFREE for free shipping all of September too.
You can top this healthy mug cake with your favorite nut butter, some homemade granola, coconut yogurt, really anything! I have also added in some chocolate chips when making it which add that extra sweetness I always love.
