    Easy dessert recipes are basically all I need in life (just kidding.. but like actually).

    Seriously though, there is nothing I look forward to more than having dessert. It’s hands down one of my favorite parts of the day. I have (hopefully) accomplished all that I have needed to do for that day, I’m typically on the couch, catching up on Social Media and a few emails, hanging out with Jord. I nosh on whatever creation I made that day, my favorite vanilla Snackimals or some Justin’s Dark Peanut Butter Cups (or a little bit of everything).

    Considering that I crave sweet foods 10x more than savory, I try to have clean and healthy desserts on hand always. Lately I have been obsessed over all things paleo-related. Everything from my banana breads to desserts to granolas. I personally think that our bodies feel lighter and cleaner when eating less processed products and more whole and clean foods.

    A few months ago I started buying a paleo granola called PaleoKrunch from Steve’s PaleoGoods. I was pretty much addicted the second I tried it. Steve makes a variety of delicious products from granolas to bars to other paleo snacks. The granola, PaleoKrunch, is a staple in my daily eats. I basically carry a bag of it with me everywhere. It comes with me when I visit my parents, when I go on vacation, anywhere. It is amazing to eat plain as a snack, in nut milk, chia pudding, yogurt or now in these 3-ingredient Dark Chocolate Paleo Granola Cups.

    I love Steve’s PaleoKrunch so much. And I’m not just saying that. I am truly addicted, plus you can’t beat the line up of ingredients in their original flavor: almonds, shredded coconut, sunflower seeds, pumpkin seeds, coconut oil, honey, vanilla extract. It is SO pure and so clean, it does not get any better than that. Plus you get the BEST clusters in every bag. I obviously pick through and eat them all first because granola clusters = life.

    I have recently been on a “make your own dark chocolate cups” kick and wanted ones with a little more of a crunch and little extra oomph to them. This led to me to add Steve’s PaleoKrunch into these bite-sized 3-ingredient Dark Chocolate Paleo Granola Cups.

    All you will need is 1 bag of dark chocolate chips, 1 tablespoon of coconut oil and half a cup of paleo granola and you are set. Stash them in the fridge or freezer and you will thank me later 🙂

    3-ingredient Dark Chocolate Paleo Granola Cups

    Prep Time 5 mins
    Cook Time 30 mins
    Total Time 35 mins
    Yields About 15


    • 1 9 ounce bag of dark chocolate chips
    • 1 tbs coconut oil
    • 1/2 cup Steve's Paleokrunch (I used cinnamon but any works)


    1. Line a mini muffin tin with liners for about 15 cups
    2. In a microwave safe bowl, melt the chocolate chips and coconut oil in 30 second increments, stirring in between.
    3. Fill each muffin tin with chocolate and top with granola
    4. Pop in the freezer for about 30 minutes until set
    5. Will stay good for months in freezer!
