Ingredients

Scale
  • 1 pasture-raised egg
  • 1 banana, mashed
  • 2 tablespoons sweet potato puree (code RACHLFREE and I used the sweet potato mash!)
  • 2 tablespoons ghee
  • 2 tablespoons non-dairy milk
  • 2 tablespoons coconut flour
  • 1/4 teaspoon baking powder
  • Topping ideas: nut butter (code RACHL for free shipping), granola, coconut yogurt

Instructions

  1. Add the egg, banana, sweet potato, milk and ghee together and mix well
  2. Mix in the coconut flour and baking powder well then add to microwave and cook for 3 minutes
  3. Remove from microwave and add with desired toppings and enjoy!

Notes

*Store leftovers in the fridge for 5 days
