    4-ingredient Raw Almond Butter Cookies? I know, this is really exciting stuff for a Tuesday.

    These cookies were so easy to make. There was no oven required, no kitchen aid, no 10+ ingredients and 2 bowls to mix it all together.

    Plus after how much you guys loved these No Bake Chocolate Chip Cookie Brownies3-ingredient Raw Pecan Brownie and 3-ingredient Peanut Butter Cookies, I couldn’t resist making another easy peasy dessert for you!

    All you need are these 4 ingredients: raw almonds, pitted dates (I didn’t soak them), Barney Butter Bare Almond Butter and vanilla extract. Then you will need your favorite Food Processor, who plays a key role in making these cookies (since it does all the work).

    It is essential in this recipe that you use the creamiest of creamy almond butters so that your cookies aren’t too grainy. That’s why I used Barney Butter. The smoothest and most creamy almond butter ever. It adds the perfect texture to the cookies so they are extra smooth and soft and chewy in the best way possible.

    I will absolutely be making these 4-ingredient Raw Almond Butter Cookies when I am craving something sweet, a little salty and only have a few minutes to prepare. I have a feeling they are now a staple in my fridge, kind of like bliss balls. They are also packed with protein, fiber and healthy fats making them an awesome pre or post workout fuel if you are on the run.

    Besides raw recipes usually being super clean, I also love the minimal clean up afterwards. There are no mixing bowls or baking dishes, just a food processor.     4-ingredient Raw Almond Butter Cookies

    Prep Time 10 mins
    Cook Time 15 mins
    Total Time 25 mins
    Yields 15


    • 1 cup of raw almonds
    • 1/2 cup of creamy almond butter
    • 1 cup of pitted dates
    • Splash of vanilla extract


    1. Place raw almonds in food processor and pulse until smooth, flour consistency (about 2 minutes)
    2. Add almond butter, dates and vanilla extract to food processor
    3. Pulse all ingredients until dough forms (about 2-3 minutes)
    4. Line a baking tray with parchment paper
    5. Begin add dollops of the dough to the tray
    6. Press down with a fork to make the lines in the cookies
    7. Place in fridge to let form for 30 minutes
    8. Store in fridge for up to a week

    Yummmmm. I love desserts that double as a healthy snack! Sometimes (meaning: all the time), I will smear some almond or peanut butter on top of a date and eat it just like that!

    I’ve gotta get my hands on that Barney Butter! I don’t think it would make it into these cookies though…I’d probably just spoon it all into my mouth first. Oops.

    To keep noise to a minimum, cause of babies, could I sub in blanched almond flour? How much would equal a cup of ground up nuts?
