I am obsessed with these cluster cookies. Trail Mix Clusters are hands down such an underrated snack to make. You only need 4 ingredients and I love how easy they are to bake. Great to have on hand for a quick snack that is fueling but also satisfies sweet cravings for a cookie.

What ingredients are in these crunchy trail mix clusters:
- Cashews – I usually use raw cashews but roasted can also work for these
- Unsweetened coconut flakes – I love using unsweetened ones so it doesn’t add sugar
- Sweetened condensed coconut milk – about 6 ounces or so is needed. You need the sweetened condensed coconut milk or the recipe will flop and the cookies won’t stick together
- Dark chocolate chips – I love using dark chocolate here but really any chocolate can work! Even white chocolate would be great for these clusters
How to make these Trail Mix Cluster Cookies:
- Preheat oven to 350 degrees F and line a large baking sheet with parchment paper
- In a large bowl, mix together cookie ingredients until fully combined
- Scoop about 1/4 batter onto sheet to form cookie. Make sure the ingredients are pressed together then repeat for remaining batter (don’t worry about cookies spreading!)
- Bake in oven for 13-15 minutes or until just about golden
- Allow the cookies to cool for a few then enjoy!

These sound great, just what I need in the late afternoon! I am on a fodmap diet for my finicky stomach. So, I will have ro go with walnuts and only have 1 or 2 at a time because coconut shreds can be a problem. I will cut back on those. Along with needing to be gluten free, it can be problematic to feed me. I do have sweetened condensed coconut milk because I was trying to make no churn ice cream with it. Didn’t love it. Quick note for others. I had leftover ingredients and thought I’d be slick and combine 1 cup coconut, 1 cup cashews, 1/2 cup choc chips and the remaining condensed coco milk to wrap things up. Well, that’s too much coco milk for the remaining ingredients and it spread all over my parchment and made my teen ask what happened to these ones 🤣. Sadly for my waistline, I found that I actually like that Caramelized coco milk that spread and am happily eating those uglier cookies too. DELISH

About how many cookies does this recipe make? The instructions say to “scoop about 1/4 the batter onto sheet to form cookie.” Is this a typo? Should it be “1/4 CUP of the batter?”
