5-ingredient Mini Paleo Chocolate Chip Cupcakes

Ingredients

Scale
  • 2 + 1/4 cup almond flour
  • 1/2 cup coconut sugar
  • 2 Handsome Brook Farms Organic Pasture-raised Eggs, lightly whisked
  • 1 teaspoon vanilla extract
  • 1/3 cup almond milk
  • ½ teaspoon baking soda
  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees and line a muffin tray with liners or grease well
  2. In a large bowl mix together ingredients except dark chocolate chips and mix until well combined (I used hand mixer)
  3. Fold in chocolate chips then add cupcake batter to muffin tray
  4. Bake in oven for about 20 minutes or until ready
  5. Top with your favorite frosting and enjoy! (see above for a link to my recipe!)
