6-ingredient Chocolate Chip Funfetti Cookies made with all gluten-free and plant-based ingredients. An easy and healthy dessert to make in less than 15 minutes!

Ingredients

  • 1/2 cup creamy nut butter (I used this cashew butter – code RACHL for free shipping)
  • 1/4 cup maple syrup (haven’t tested coconut sugar)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup almond flour
  • 1/3 cup gluten-free oat flour
  • 1/2 teaspoon baking powder
  • 2 tablespoons sprinkles
  • Dark chocolate chips (I use these gems – code RACHL for free shipping!)

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper
  2. In a large bowl, cream together the nut butter, maple syrup, vanilla and almond extract
  3. Mix in the flours and baking powder until well combined
  4. Fold in the sprinkles and dark chocolate chips
  5. Add about 2 tablespoons of dough into your hand and roll into a ball then gently press down and add to baking sheet for each cookie
  6. Bake for 10 minutes and enjoy!
