    I have been wanting to write this post for so long. But to be honest, I really wasn’t ready to write it until recently…

    I am frequently asked how I stay in shape being a food blogger and recipe developer. Shockingly enough, I ask myself that question often too.

    I am surrounded by food 24/7. There is a pantry 10 feet away from me with 12 shelves stacked with various types of granolas, nut butters, chocolates, bars and more at all times. There is fridge that honestly has not had vacancy since we moved in last August, and a freezer that is filled with the leftovers from recipe testing (mostly cookies, banana breads and other desserts) and who even knows what else is in there…

    Then there are the packages that arrive daily filled with food. Half the time I don’t even know how the company got my address (yes, it is scary) or any idea what the product is. 90% of the time it is food related and luckily since I am in the clean eating space, chances are it is organic and likely up my alley to eat.

    But that doesn’t mean I don’t ever feel stressed or overwhelmed by it. I am human too. Continue Reading

    Gooooooood morning, Homemade Fluffy Paleo Pancake!

    I am pretty sure making pancakes is one of my top 5 favorite hobbies. Call me crazy but there is nothing more satisfying than a fat stack of cakes. Sometimes I make my own, sometime I cheat and use a mix but no matter what, I’m devouring every single crumb and am in complete heaven. I also like to make double when I’m cooking some and saving them for later in the week. Most pancakes freeze really well (especially these) so feel free to double the batch and go to TOWN.

    These pancakes I’m sharing with you today are one of my favorite pancake recipes yet. They are hands down the fluffiest homemade paleo pancakes I have ever made from scratch. They are very thick and not as thin like many of the other paleo pancakes I have seen.. And they are very simple allowing for any customization you are craving. Dark chocolate chips? Definitely. Organic blueberries? For sure. Sliced banana? DUH! You can even get crazy and do a mix of everything. All drizzled with endless maple syrup and some nut butter, puhlease.

    For the cakes, I use a base of pasture-raised eggs (I haven’t tested flax egg here) with full-fat coconut milk and coconut oil. I do think the full-fat coconut milk is key here. The batter really needs that thicker liquid of sorts and regular non-dairy milk is a bit too thin. If you do try regular non-dairy milk, you may need to add in more flour but again, I recommend the full-fat coconut milk.

    We are also using a mix of coconut flour and then some almond flour for the flours in the recipe. These are my two go-to paleo flour options and I love using them together in recipes since they compliment each other well. Coconut flour absorbs liquid very quickly aka why we need to use 3 eggs, oil and a decent amount of milk. I found that the almond flour helped bulk the recipe up a bit and then the pancakes are too overpowering with the coconut flavor. At first I tried these with all coconut flour and it was missing a little something to get them fluffy! Continue Reading

    A new dessert is here friends. And for once it doesn’t involve chocolate (shocker, I know).

    These Blueberry Oatmeal Crumb Pie Bars are absolutely insane and they’re perfect for summer with all the fresh organic juicy blueberries around. But let’s be real, I will be making these all year around.

    I’m not usually one to crave fruity desserts unless it involves banana aka because then it involves chocolate. But these blueberry pie bars are hands down one of the best desserts I have made in awhile. I wish I saved them for my book but lucky you, you will get them on the blog.

    This recipe is completely plant-based, gluten-free and nut free-friendly. Plus it doesn’t require a million different ingredients. If you are a usual reader of the blog or like to cook healthier recipes, you will likely have all of these ingredients on hand.

    These Crispy Dark Chocolate Almond Butter Cups are my latest stash in the fridge and I have a feeling they will be my new go-to cups when I make my own. I love that they are crunchy, are low in sugar and secretly have superfoods blended in there.

    Say what?!

    Yes, there are hidden superfoods in these cups and you don’t even taste them. I use Better Body Food’s LIVfit Superfood Organic Superfood Blend. it is flavor-neutral, organic, with no artificial flavors or sweeteners and it is made from whole fruit and vegetable concentrates.     It has been awhile since we have shared a new banana bread recipe on the blog.

    I made so many loafs over the past couple of years between my Paleo Chocolate Chip Banana Bread, Vegan Cinnamon Coffee Cake, Dark Chocolate Sweet Potato loaf and so on, that I was really satisfied for a bit.

    Until I was craving a slice of banana bread that had a ton of peanut butter flavor with melted chocolate and didn’t call for any eggs in it. Aka I was out of eggs and didn’t feel like going to the store to get more..

    I didn’t even plan on sharing this recipe as I was making in the kitchen. I had zero expectations for how it would turn out, but the second I took this sweet and banana-y loaf out of the oven, I knew it was going to be a-m-a-z-i-n-g.

    This Vegan Chocolate Chip Peanut Butter Banana Bread pretty much combines all of my favorite foods into one perfectly delicious recipe. We have bananas, chocolate and peanut butter all in one gluten and dairy-free banana bread!

    What I love about this bread is how versatile and EASY it is to make too. I used sprouted oats and oat flour as the flour but you can absolutely sub spelt or gluten-free flour if you choose.

    I use Better Body Foods Coconut Oil and their PBFit Official Powdered Peanut Butter in this recipe too. I love baking with their PBFit as you saw in those Double Layer Peanut Butter Brownie Cookie Bars and even in my PB&J Smoothie Bowl!     Smoothie bowls, where you been?

    Oh I know, it has been so cold here in New Jersey so instead of freezing my buns off in the morning, I have been turning to oatmeal, muffins, granola and yogurt, etc. in the morning for my breakfast.

    But last week the craving hit and there was no cold stopping my smoothie bowl craving. Seriously though, it was unreal. It was basically snowing outside and next thing you know ya girl is craving all the smoothie bowls in the world. I received Better Body Food’s Organic LIVfit Superfood Organic Superfood Blend just in time to make this bowl.

    What better smoothie is there than Peanut Butter & Jelly though? I eat PB&J for lunch a few days a week still (I am 5 years old at heart) and this smoothie bowl is my latest favorite way eat the best combo ever.

    A world that combines brownies, cookies and peanut butter into one dreamy dessert, is the place I want to be.

    These Double Layer Peanut Butter Brownie Cookie Bars are a game changing dessert you guys. They are vegan, gluten-free and taste so rich and fudge-y and perfect.

    Word on the street is that today is National Peanut Butter Day (happy holidays), but we all know every day is a day to celebrate peanut butter. I’m so excited to share these Peanut Butter Brownie Cookie Bars with you and I hope that you are drooling over them as much as I am. I am actually eating one right now as I write this blog post with some coconut yogurt on top.

    Let’s dive into this recipe though. Since it is a double layer dessert, there are two different recipes going on in one place. The peanut butter cookie layer (the bottom layer) is made with creamy peanut butter, sweetened with coconut sugar and even has some extra peanut butter powder in it to add even more PB flavor. I use PBfit peanut butter powder  from Better Body Foods. PBfit is a powdered form of peanuts. It’s a lighter way to add even more peanut butter flavor to things like smoothies, baked goods, anything!

    The peanut butter brownie layer has PBfit chocolate peanut butter powder in it to add that chocolate and peanut buttery flavor. You will notice both layers are made with many Better Body Foods products. I use their coconut sugar, liquid coconut oil, coconut flour, cacao powder and two types of PBfit all in this one recipe!     You know that food that you just can’t live without? The one you need to eat every single day, rain or shine, sick or not. Well friends, for me that is dark chocolate. I can confidently say that I eat dark chocolate every single day. I eat it before dinner because I can’t keep it in my pants.     Peanut Butter Cup Banana Bread Muffins. These may be a mouthful to say but just wait until you are eating one of these chocolate peanut butter banana muffins from heaven. You will probably go nuts.. just saying.

    Working out in the morning is one of my favorite parts of my day. I usually work out around 9:30am (the luxury of working for myself). This allows me to take my time in the morning and have a leisurely breakfast, work a little then head out the door to a class. I also even go to the grocery store to pick up any necessities for recipes that day first before heading to work out. Can you tell I like to accomplish a lot in the morning yet?

    My work outs usually consist of a barre or spin class. Those have been my two favorite forms of workouts for the past few months. Spin is usually how Jord and I exercise together, and barre is my go-to for solo time or with friends. Continue Reading

    As you babes found out in my Paleo Carrot Cake Pancakes recipe, I am not exactly a huge fan of carrots.

    The only way I eat them is when they are hidden in sweet things (like cake and pancakes) so I can barely taste them. I pick them out of salads, hate when they are in my vegetable sushi rolls and no matter how much hummus I smear on top, I just can’t eat them!
