More granola is HERE my friends.

There is no such thing as too much granola in my opinion. An absolute staple in my daily life (not kidding) and on most mornings you can find me shoveling this into my mouth as I nurse Ezra and patiently wait to eat my breakfast.

Usually I am all about the crunchy granola and I even keep it in the fridge 99% of the time. But today, we are switching things up.

We are making CHEWY granola for the first time on the blog!

For some reason the word “chewy” really is just one of those words that kind of grosses me out. Similar to how “moist” may bother some (but not me), “chewy” is something that makes me kinda of like “uhhh..”.

But truthfully there is no other word to describe the texture of this granola. It really turned out so chewy and I am pretty sure its from the mashed banana added to the mix.

Did I mention there is no sugar added to this granola besides banana and the chocolate chips?! It is insane. And usually it’s the sugars the give the granola the extra clusters. Continue Reading

Super Chunky Grain-free Chocolate Chip Granola made with all vegan and gluten-free ingredients for an easy and healthy nut-based granola recipe!

I’m the annoying person who opens a bag of granola. And then picks out every single cluster then eats the rest of the crumbs afterwards.

live for granola clusters. They’re my favorite snack (dipped in nut butter). Every time I need a little nosh or something crunchy to snack on, I pull out a bag of granola and go to town.

The granola love affair likely isn’t coming as a surprise to you guys as you see me post on Instagram daily about ‘nola. Whether that’s sprinkling it on my breakfast or dessert bowls or just snacking on it during the day, it is my go-to always. Ever since Quaker was one of the only brands making granola. I used to snack on that one constantly. And in the dining hall in college, they had a huge tub of it and I would always get some to go in a coffee cup (I’m crazy, I know).

I’m not biased when it comes to grain-based or grain-free granolas. I usually spice things up a bit and mix them together in fact. My fridge constantly has a few bags opened. You may be wondering why the heck I store granola in the fridge and it is to make it extra crunchy! I find some brand’s granolas tend to get soggy if not. I do buy granolas more than make them (guilty since it is easier), but I do love making some homemade clusters when I can.

And now I finally have a homemade GRAIN-FREE granola recipe to share with you! With CLUSTERS!

The number one most requested recipe is finally here. This Super Chunky Grain-free Chocolate Chip Granola is going to be your new BFF, I can promise you that. It bakes in one big mama cluster and then you break it up into smaller pieces. This recipe is so easy to make and it is even plant-based and relatively lower in sugar compared to most granolas in the store. Continue Reading

  • Healthy Dark Chocolate Granola with Clusters (vegan + gluten-free)

Healthy Dark Chocolate Granola with Clusters made with vegan and gluten-free ingredients for an easy and healthy homemade granola recipe!

Healthy Dark Chocolate Granola with the biggest clusters made with all vegan and gluten-free ingredients.

Healthy Dark Chocolate Granola with Clusters made with vegan and gluten-free ingredients for an easy and healthy homemade granola recipe!

It has taken me approximately 3 years to perfect a granola recipe with extra large clusters.

Ok ok, it’s not like I test this too often since I just buy granola at the store (aka lazy).

But the day is here and we finally have a healthy granola recipe with CLUSTERS. Lots and lots of big mama clusters. In fact this granola comes out of the oven in one ginormous cluster, ready for you to break it a part. It is SO good!!

I eat granola for the clusters. I pick them out first and then make my way to the crumbs. Or really just give them to Jord because he doesn’t get as excited as I do over a big a$$ granola cluster..

The easiest homemade granola recipe ever.

Homemade granola is something that is so easy to make once you have a good recipe you love. I have made a few granolas here on the blog but none have ever compared to store bought ones (in my opinion). This granola is made of all vegan and gluten-free ingredients and has a base of gluten-free rolled oats, coconut shreds, pecans and various seeds.

I sweeten it with some maple syrup and coconut sugar (so delicious paired together) and I add in some dreamy dark chocolate chunks after it is done baking from Hu Kitchen.  Continue Reading

Friends, I have your new favorite breakfast recipe right HERE.

These Mini Gluten-free Collagen Granola Bowls are not only the most adorable (yes I’m not describing food as adorable) breakfast but they are also so simple and easy to make and eat on the run.

One of your biggest requests is more “on-the-go” eats for breakfast and I gotchu covered boo. Make a batch of these on a Sunday or any day after work and you can eat them for breakfast for a few days. Usually I eat 3 at a time, but depends on the amount of toppings and things I toss in there. These granola cups are super versatile and you can pretty much add anything you want in them. I love doing yogurt, fruit, granola, nut butter, anything! But I do recommend adding the toppings in before eating in the morning so the bowl doesn’t get soft.

These Mini Collagen Granola Bowls have an oatmeal and almond flour crust and I also added in some Vital Proteins Collagen Peptides for extra protein and a nutritional boost (more on collagen here!). You don’t even taste it, which I love so it isn’t overpowering, more just a little something extra for us to add to the mix. Continue Reading

  • Pistachio Cacao Grain-free Granola (vegan + sugar-free) + Be Well Recap

Pistachio Cacao Grain-free Granola that is vegan and sugar-free, perfect for a healthy and easy granola!

Pistachio Cacao Grain-free Granola that is vegan and sugar-free and my thoughts on Be Well cleanse!Pistachio Cacao Grain-free Granola that is vegan and sugar-free, perfect for a healthy and easy granola!

Hi friends! Checking in here to share that I am officially DONEZO with my Be Well cleanse. 14 days and many smoothies later, I have completed the elimination diet.

In case you missed my Almond Coconut Fudge Bars post, I suggest reading that first to get an idea on what I am talking about. It was the first of my favorite recipes I made for this cleanse. Since you cannot have gluten, grains, dairy, soy or pretty much any sugar, it certainly put me to the test.

    14 days of no:

    • peanuts or peanut butter
    • alcohol
    • high sugar fruits (bananas, pineapple, etc.)
    • beans and legumes (if you’re vegetarian you may be able to still have this if you do it)
    • sugar (coconut sugar, dates, maple syrup, everything!)
    • rice, grains, nothing!
    • eggs (but i didn’t follow this)
    • red meat (but i didn’t follow this)
    • night shade veggies (tomatoes, peppers, etc.)

.. And likely some other things I am missing but you get the point. You have 3 shakes and 2 full meals a day for 14 days.

I am someone who craves sweet over savory. I’d rather eat a bag of chocolate cookies than pretzels. Most of the time I crave banana almond butter toast as opposed to an egg sandwich. So needless to say, these past 14 days were a bit of a shock for me. But to be honest, it wasn’t as hard as I thought.

I am the type of personality who adjusts pretty easily to things after awhile. I do not favorite change or being taken out of my routines but once I am moving and grooving again, it’s totally fine. It took a couple days but I was in a “Be Well” routine before I knew it. It seems very intimating and overwhelming to do something like this and I would be lying if I said I wasn’t nervous. I try to not be regimented with food so this was going against what I really preach to myself but I truly trust Dr. Lipman, and it is only 14 days! Continue Reading

Good morning friends! Happy Monday. I am so excited to be sharing the first recipe post of December with you today.

December is going to be a quicker month here on the blog. We have about half of the usual content planned (your girl needs a breather for the holidays) but I can promise a ton of deliciousness this month and of course into the New Year.

Last week you may have seen on Instagram that I attended the Well+Good 2018 Wellness Trends Breakfast with my friends at Tropicana. I was so excited about this breakfast event as I am definitely one of those people who geek out over the latest and greatest in the industry. Plus getting to see a handful of my friends and other people in the space, was such an amazing start to the day.

Well+Good announced the 18 wellness trends for 2018 over on their site this morning but I am going to give you a brief rundown as well. Definitely head over to their site for the full recap though. Continue Reading

  • Crunchy Nutty Pumpkin Pie Granola (gluten-free + vegan)

Crunchy Nutty Pumpkin Pie Granola for an easy gluten-free and vegan granola!

Crunchy Nutty Pumpkin Pie Granola for an easy homemade gluten-free and vegan granola!Crunchy Nutty Pumpkin Pie Granola for an easy gluten-free and vegan granola!

So I am the first to admit that I am not the best homemade granola maker. I have tried a few times and yes they are yummy but for some reason I always like the brands you can get at the store better. They are crunchier and the whole skipping the baking part also isn’t too bad ha! But I am a sucker for my favorite granola recipes here on the blog, especially the chickpea one!

This Crunchy Nutty Pumpkin Pie Granola is my first official oat-based granola with an epic crunch!

This recipe turned out crunchy and sweet with no refined sugars! Plus I added a few of my favorite fall spices and nuts and seeds to the granola to make it hearty, satisfying and simple!

But it is mind boggling to me the amount of granolas out there LOADED with excess sugar. I am all about a little sweetness, but sometimes the amount added is just silly. You only need a little maple syrup for this recipe! Continue Reading

Deliciously easy Dark Chocolate Sea Salt Grain-free Chickpea Granola made with no added sugar!Deliciously easy Dark Chocolate Sea Salt Grain-free Chickpea Granola made with no added sugar!

It is no shock to anyone after seeing my Instagram account and watching my daily stories that I am granola OBSESSED. I have over 16 types of granola currently in my kitchen. And yes, I love each and everyone equally.

I like having a mix of grain-based granola, grain-free granolas, etc. on hand. That way I can switch things up easily and really never get bored. I have buckwheat granolas, oat granolas, nut-based granolas and I keep them either in the fridge or the pantry. I personally prefer to store all granola in the fridge after it has been opened since the ones I eat are made with such simple and fresh ingredients, they tend to go bad quickly. I also live for a granola with a crunch and the coldness ensures that crunchy texture.

One type of granola I have never in my life seen or heard of is chickpea granola. Which to be honest, is pretty shocking to me since roasted chickpeas are all the rage. I am all about them chickpeas and eat different sources of them everyday from hummus to roasted ones to making chickpea salads or falafel burgers. Continue Reading

When I arrived home from Thanksgiving weekend in New Jersey, there was a 52 lb package waiting for me at the front desk. I think it has to be the heaviest package that someone has ever delivered to my apartment.

I saw the Wolf Gourmet logo on the side and was SO excited. As someone who doesn’t own a toaster nonetheless a convection oven, this is flipping game changer you guys. Jord was probably more excited than I was. He anxiously waited until I was “ready” to take it out of the box.

I received the Wolf Gourmet Countertop Oven with the gorgeous red knobs since a few of my other appliances are red as well. Pretty random coming from the black, white and gray chick but apparently I was feeling ballzy the day I registered for my bridal shower. Continue Reading

  • Homemade Granola Bowls (vegan + gluten-free)

Vegan Homemade Granola Bowls made with less than 10 ingredientsVegan Homemade Granola Bowls by rachLmansfield

These granola bowls may be the cutest thing I have ever made. Plus they are SO easy to make and are such a perfect breakfast or snack idea. I literally want to host a tea party just to have an excuse to make these for people.

They are even vegan, gluten free-friendly and have planted based protein powder in them, making them super nutritious and a healthy and delicious breakfast or snack. It’s basically like eating an ice cream cone except 100x better because…granola, duh.
