Creamy Thai Kabocha Squash Soup for an easy Vegan and Whole30-friendly recipe!Creamy Thai Kabocha Squash Soup for an easy Vegan and Whole30-friendly recipe!

Can you believe this is the very first soup recipe on the blog?! I am not a soup person whatsoever, but the seasons changing always has everyone craving a comforting bowl of soup. Especially Jord who flipping loves a bowl of soup.

If I eat soup, it needs to be creamy-ish with a hearty base for me to stay full and satisfied. This Creamy Thai Kabocha Squash Soup does just that. It is also full of flavor and has such a unique and delicious taste, you guys are going to love!

I first had Kabocha squash soup when I was in La Jolla a few months ago and could not get over how delicious it was. So creamy and satisfying. It was the perfect appetizer or light bowl to pair with our meal.

This Creamy Thai Kabocha Squash Soup is made with New Barn’s Organic Almondmilk. It adds that creamy texture to the soup and a touch of sweetness despite there being no added sugar! The soup is also Whole30-approved since New Barn Unsweetened Organic is the Whole30-approved nut milk and basically saved me when Jord did Whole30 earlier this year. We also made those breakfast salads using NewBarn in the dressing too.. definitely check them out! Continue Reading

  • My Go-to Morning Smoothie (gluten-free, vegan-friendly)

My Go-to Morning Smoothie made with deliciously healthy ingredients for an easy breakfast shake!
My Go-to Morning Smoothie made with deliciously healthy ingredients for an easy breakfast shake! My Go-to Morning Smoothie made with deliciously healthy ingredients for an easy breakfast shake!
Does anyone else go through a phase where they eat the same thing for breakfast every single day?

I go through phases where I literally want the same thing every single morning when I wake up and can easily go about 6 months more until I get tired of it. I am such a creature of habit, it is insane. Jord on the other hand, cannot eat the same thing more than two days in a row without tiring of it.

Currently this smoothie, is my obsession and my latest habit. It is my go-to morning smoothie, and it is SO GOOD. It is made with all ingredients I typically keep on hand in my fridge or freezer. And can be easily altered based off what you have already or what you are craving. But I must say, this combo is seriously on point. I still love my Avocado Orgasm and Zucchini Bread Smoothie but this one is my current fav.

What I really love about this shake is how rich and creamy it is, and how easy it is to make. I use New Barn Organic Unsweetened Almond Milk (duh, when do I not use their almond milk) and just add a few simple ingredients to the blender, top it off with some granola and breakfast is served.

New Barn is my go-to almond milk for many reasons but what I really really love about it is that it’s actually organic, which many nut milks are not. Almonds are one of the most heavily sprayed nuts with pesticides so it is important to me to enjoy almond milk that is organic and made with little ingredients/additives.

That is where New Barn comes in! The perfect base/liquid to add to any shake or smoothie. So flavorful and pure and a staple in my fridge!

    WHAT YOU NEED

5-minute Collagen Coconut Milk made with 3 simple ingredients for an easy coconut milk!3-minute Collagen Coconut Milk made with 3 simple ingredients for an easy coconut milk!

While I love the convenience of buying store-bought milk, sometimes the inner food nerd in me just loves making some homemade nut milk to enjoy. I’m not one to make the traditional almond milk (hello, that is what New Barn is for) but I love making unique types of dairy-free milks that I can’t find in the grocery store.

This 5-minute Collagen Coconut Milk is my latest obsession in the milk world. I go through phases where I make/use the same milk over and over again and this collagen coconut milk has been on repeat for a couple months now. I love how easy it is to make, the extra protein added from collagen peptides and the sweet coconut flavor. I add it to my smoothies, dip cookies in or just with cereal!

A lot of you ask me why I use collagen peptides and if they are worth the investment. Personally, I think collagen peptides are one of the most important items in my pantry. I love how versatile they are since they are unflavored. I’m getting extra nutrients from this magical product that dissolves in everything, and it provides extra protein anytime I use it.  Continue Reading

  • Savory Breakfast Salad + Creamy Cilantro Jalapeño Dressing (Whole30)

Savory Breakfast Salad with Creamy Cilantro Sauce for a delicious Whole30 meal!

Savory Breakfast Salad with Creamy Cilantro Jalapeño Dressing for a delicious Whole30 meal!Savory Breakfast Salad with Creamy Cilantro Sauce for a delicious Whole30 meal!

Salads can be a breakfast thing too, ya know?

I’m the first to admit that I crave sweet things more than savory most of the time. Especially when it comes to breakfast items. I’m more likely to be eating a smoothie bowl, pancakes or banana bread for breakfast than anything else. But I am a huge savory breakfast for lunch or dinner person. I eat eggs with my lunch or dinner on the reg.

Back in the winter when Jord did Whole30, we pretty much went through two dozen eggs a week. It was absolutely insane but it is the easiest way to add extra protein + fat to a meal. I make bowls of pasta and add an egg. I make breakfast tacos with eggs. I make a burger and put an egg on it. Pretty much anything in our house has an egg on top.

But when J was on Whole30, it was really challenging trying to find something to make when he needed a quick and easy meal. Whole30 requires a ton of prep work and planning. We used to spend hours on the week prepping all of his meals for the week (more on that here). Continue Reading

My love for banana bread is by no means a surprise to you guys. We have over 16 varieties of banana bread on the blog but this is the very first truffle banana bread version.

I am so excited about the recipe for a few reasons.

First of, it is made with only seven ingredients. Number two, it is grain-free, plant-based, and contrary to how it sounds, it is made with all good ingredients. We are giving banana bread and truffles a bit of a new meaning today.

These truffles also have an extra creamy texture and delicious flavor from New Barn’s Barista Blend. You likely remember the barista blend from the Magical No-Coffee Cacao Collagen latte last month and we are using it again today. Continue Reading

Magical No-Coffee Cacao Collagen Latte made with nourishing and delicious ingredients

Magical No-Coffee Cacao Collagen Latte made with nourishing and delicious ingredientsMagical No-Coffee Cacao Collagen Latte made with nourishing and delicious ingredients

I have likely shared this somewhere in the social media/blog-o-sphere but I have never had a cup of coffee. Crazy, I know.

I have nothing against coffee whatsoever but I personally do not enjoy the taste. The smell on the other hand, oh my gosh. I bought Jord a coffee maker last year for Valentine’s Day just so I can smell coffee in the apartment on weekends.

After I tell someone coffee isn’t my thing, they figure I drink matcha or green tea. I then surprise them again and say how I’m personally not a fan of the taste of matcha. It is a bit too strong for me and even when it is masked in a latte or dessert, I’m just not into it. This also really limits my caffeine intake too since I don’t drink caffeinated tea either. The only form of caffeine I get is from kombucha or chocolate. Just call me the natural energizer bunny because I don’t know how I am still going. It is likely because I have never been caffeine dependent.

Not going to lie though, I do often feel left out when everyone is drinking their fancy af lattes with cool unicorn designs and walking around with bulletproof coffee.  Continue Reading

  • Dairy-free Challah French Toast Sticks

Dairy free & whole wheat Challah French Toast SticksDairy-free Challah French Toast Sticks

Um, where do I even begin right now?

Challah French Toast Sticks made with mini whole wheat challah rolls (this brand is our favorite) are a serious game changer. There are two things that are key to making amazing french toast: 1) the bread 2) the type of milk.

Jord’s favorite type of french toast is made with challah, so when I told him I wanted to make some french toast sticks, he said “if you don’t use challah, is it even french toast?” and he was right. Challah is the best bread for french toast. It’s fluffy, soft, the “crust” is barely crust-like and it is straight up AMAZEBALLS.

The milk is also key. You want something creamy and sweet to add that boost of flavor to the mixture. For my Challah French Toast Sticks, I used New Barn Organic Vanilla Almond Milk. I first spotted this gem in my local Whole Foods and was amazed by how pure and delicious it is. There are no weird chemicals in it. They use all organic ingredients which is a huge plus in my book, and they do not use carrageenan (a binding chemical you should avoid when possible). Continue Reading

  • Ezra Benjamin’s Birth Story

    Ezra Benjamin's Birth Story

On January 26, 2019 at 1:10am we welcomed our little muffin, Ezra Benjamin Carpenter, into this world.Ezra Benjamin's Birth Story

Ezra was born 4 weeks early. I was exactly 36 weeks the night my water broke and having him a month earlier than expected, wasn’t exactly something we anticipated happening.

Call me crazy but intuitively, I knew he was going to be here as soon as he could.

When we last spoke about pregnancy on the blog, I mentioned my OB put me on a mini “bedrest” of sorts when I was 35 weeks and 5 days. I lost my mucus plug a week prior and it continued to fall out in small pieces every single day. Then the contractions started. I was told these were likely Braxton Hicks contractions, but I knew these were different. They felt like period cramps on steroids (coming from someone who had insane cramps in high school!) and were very consistent in their timing. I’d have them for 5 minutes then they’d disappear for 30 seconds or so then they’d come right back. And this continued every single day for a week, all day! Likely my biggest physical sign that Ezra was coming soon.

So now let’s get to the birth story from start to finish. It’s a long one, so cozy up with some cookies and milk and enjoy… Continue Reading

Super easy and delicious 5-ingredient Mini Paleo Chocolate Chip Cupcakes!

Super easy and delicious 5-ingredient Mini Paleo Chocolate Chip Cupcakes! Super easy and delicious 5-ingredient Mini Paleo Chocolate Chip Cupcakes!

With as much baking that goes on in my kitchen, I am not sure why it has taken me this long to come up with a classic cupcake recipe to share.

These Mini Paleo Chocolate Chip Cupcakes are the cutest and most delicious cupcakes. They are super simple and easy to make and the perfect recipe to use if you don’t have a go-to cupcake mix that you like or if this one (my personal fav).

With all of the holidays and festivities happening over the next few months, these chocolate chip cupcakes are here just in time. They are made with just five simple ingr

edients including Handsome Brook Farm pasture raised eggs and there is a pretty solid chance you have most of them on hand already if you bake a lot of recipes I share on here.

No fancy pastry flours or buttercream are happening today. We are using almond flour as the flour for the cupcake, coconut sugar to sweeten it, almond milk for a little creaminess and of course eggs, which are key in these cupcakes.  Continue Reading
