    Let’s chat healthy fruit crumb bars shall we?

    If you know me well, you know I don’t stray away from my usual chocolate or peanut butter type desserts over here. I’m always the one dashing to the freezer to defrost a peanut butter cookie or to the counter where my grain-free brownies usually are.

    But then, something happened. I made these Fruit Crumble Bars and pretty much fell in love. I was converted to the fruit dessert side for a couple days (all that these lasted for) after eating these subtly sweet crumb bars with the best oatmeal crumb topping I have ever had. And I felt satisfied after – mission accomplished.

    I know what you are thinking.. um, Rachel it is almost end of summer. Why are you sharing a fruit dessert now? That is a great question friends. I made these fruit crumb bars with plumcots (aka a plum and an apricot in one) but they are so versatile. You can use any fruit you want, making these seasonal all year around.

    Next up I will try some apples when we do our annual apple picking extravaganza and maybe some cranberries or something wintery for the holidays. We’ll see what happens. Continue Reading

    An oatmeal bake for two? Yes please!

    I am all about the mini recipes these days. Mini pretty much means smaller serving of a recipe around here.

    I know many of you guys are always looking for recipes to make that don’t create a huge batch of something and I totally get it! The more food I have prepped at times the better, but there are times Jord and I don’t always want the same thing to eat and I don’t want to make a huge baked oatmeal or batch of cookies if he isn’t going to eat it too!

    That’s what brings us to this Mini Chocolate Chip Banana Bread Oatmeal Bake. One of the easiest breakfast recipes ever since you pretty much mix a few ingredients together in a bowl, pour into a small cast iron skillet and you’re good to go.

    So what do you need for this mini healthy oatmeal bake?

    I made this oatmeal bake, which made two servings for me. I used my mini cast iron skillet and added in some of my Majka lactation booster for my milk supply. Using the booster is optional in this recipe but for any of my nursing mamas or mama’s to be, I highly recommend trying out Majka’s products.     For all my oatmeal cookie lovers out there, we finally have a chewy chocolatey oatmeal cookie that is so easy to make. Almost too easy to the point where I now want to continue to make them daily and it is getting dangerous. They have the most perfect chewy consistency and even have a little crisp on the outside if you bake them a couple extra minutes.

    I don’t think a night goes by that I don’t want milk and cookies after dinner. Seriously though, Jord can attest to my complete addiction and now with breastfeeding my hunger is actually on a whole new level. I’m really trying to fuel my body with extra nutrients and boat loads of food and water every single day to keep me going and give Ezra the wholesome foods he needs too through my milk supply.

    What I use to help boost my milk supply…

    That is why Majka comes into play. You guys first learned about Majka in my Gluten-free Lactation Banana Bread I shared. Majka truly makes the most amazing products that have boosted my supply. I eat a couple of their bites every single day and try to sneak in the new lactation booster powder. I have found a lot of lactation brands to be pretty gimmicky and don’t really sell products made with good ingredients.

    Hope no one is sick of carrot cake recipes yet because these new Chocolate Chunk Oatmeal Cookie Carrot Cake Bars are officially one of my new favorite recipes to make on the blog. Ya baby – I said it!

    They are lightly sweetened (just a little maple syrup in the batter), gluten-free, dairy-free and have zero refined sugar in them. Plus we use a mix of almond flour, rolled oats, oat flour for the flours here. I love doing a mix of both almond and oat for this because it makes them a bit more filling and the consistency is on point. Sometimes I find that baking with only grain-free flours leave the consistency a bit too moist, so adding oats really helps!

    These bars are almost like an oatmeal cookie or oatmeal bake you’d enjoy in the morning. I personally liked eating these for breakfast more than dessert and paired them with yogurt, nut butter and fresh fruit! You can also freeze them too if you want to save any for later, but that likely won’t happen once you try these 😉

    I used Hu Kitchen’s dark chocolate bar and cut it into chunks for the chocolatey sweetness here. Slice up one or two (I prefer two, duh!) and mix some in the batter and then sprinkle some on top for that extra chocolatey goodness. Continue Reading

    I have a feeling you guys are going to go crazy for this recipe.

    First of all it is ready in 2 minutes. Second of all is tastes like brownie batter and we are eating it for breakfast. And lastly, there is barely any clean up since it is made in the microwave!

    All you need are a few easy ingredients that you likely have on hand already. We combine gluten-free rolled oats, mashed banana, egg, flaxseed, cacao powder and some nut milk to make the oatmeal batter. Mixed with some dark chocolate chips and dollop of nut butter on top – it is heavenly!

    This recipe does serve two people so feel free to split it with a friend, roommate or just save the other half for later. I recommend eating this recipe while warm and fresh out of the microwave so if you make it ahead of time, definitely reheat before eating so you get the full brownie batter taste!

    It feels like forever ago since I have shared a baked oatmeal recipe with you guys!

    Oatmeal bakes were actually one of the first recipes I used to make when I started experimenting in the kitchen. I loved how it combined a little cake-like dish with oatmeal for breakfast and how easy they are to make. I used to just toss in any mix-in’s and things we had in the fridge or pantry and make so many different types of baked oatmeals.

    This one though is hands down my favorite. I guess it could be because it has a bit of a banana bread theme (shocker) and I also think the ratio of oats to the other ingredients used are on point. It just soft on the inside and the outside has a little crunchy edge and “crust” of sorts.

    The best part about this recipe though? It is ready in just 25 minutes and you’ll get 4-5 servings out of it so you are set for the week! I love adding a slice to my breakfast plate with some coconut yogurt, fresh fruit and granola on top. It feels like I’m eating cake for breakfast or a big oatmeal cookie of sorts.
