    Fun fact about me that you likely don’t know.

    Homemade rice crispy treats are my absolute favorite dessert in the whole wide world. They triumph any banana bread in my book and you know that means business.

    In college, I used to microwave a huge rice crispy treat that my cafeteria sold. I’m not talking the blue wrapper kind of rice crispy either. A homemade one with marshmallows, butter and extra chunks of marshmallows. Pop it into the microwave for 30 seconds and OMG!

    My best friend’s mom actually made a huge rice crispy treat for my bachelorette party – that is how much I love them. Plus they are always a crowd pleaser. And in fact,  they are surprisingly so much easier to make than most think.

    Today we are making healthy homemade rice crispy treats with a twist.

    There are are no marshmallows in these bad boys either. We’ll get to the ingredients in a moment, but let’s first talk about the run down of flavors happening here..

    First off there is a peanut butter pumpkin bottom layer (the orange part). Then we add a dark chocolate crispy layer right on top and it is like a pumpkin peanut butter cup you guys! The flavors together are absolutely insane. Maybe it is the mom in me now that wants to make fun treats like this.     Remember when we made those Gluten-Free Chocolate Chip Cookie Brownies aka “brookies” and everyone started to go crazy?!

    Ya, we are back today with a NEW brookie recipe for you. Except this time there are a few new twists on the original recipe I shared.

    For starters, this recipe is about 85% brownie and 15% cookie. I wanted to make something a little more decadent and chocolate-y than the usually half cookie/half brownie portion in a brownie cookie recipe. Plus the brownie in this is a lot fudgier than usual. It’s almost like a moist cake of sorts and when you bake it in cupcake/muffin form, it really makes it even more cakey than I imagined – I am obsessed!

    This healthy brownie recipe is grain-free, gluten-free and dairy-free and SO fudgy.

    I use a mix of almond flour, cacao powder and melted dark chocolate (along with a couple other goods) to get that extra dense and chocolate-flavor.

    But now let’s chat about the peanut butter cookie topping. Some may say this is “cheating” but I personally think this is one of the smartest baking hacks ever. There comes a time when you are in a rush or just don’t feel like making cookies from scratch and I don’t blame you. As a soon-to-be Mom, I have a feeling that will be the new normal over here.     I have some new FUDGE and candy for us friends! And this isn’t your usual homemade fudge recipe that melts in .5 seconds when you take it out of the freezer.

    This Gluten-free Chocolate Peanut Butter Freezer Candy has a little crunch to it. And no added oil in the whole recipe.

    It reminds me of fudge when you take a bite and it melts in your mouth but I like to think of it as a homemade candy recipe with a fudge-y twist to it.

    We are using dark chocolate, creamy peanut butter, ground flaxseed and Wedderspoon’s Manuka Honey in this recipe.

    And that is IT (besides the sea salt). It is truly one of the easiest desserts ever besides going to a store and buying something already made 😉

    I love that this fudge combines chocolate and peanut butter and is still pretty low in sugar for fudge.

    It also stays so well in the freezer so you can stash it there and snack on it as you like. I almost wanted to call this snacking candy but you don’t need me to tell you to snack on this – I know you well enough to assume you know to obviously!

    I love using Wedderspoon’s Manuka Honey in recipes like this aka no-bake recipes. I add the honey in after I melted the chocolate and peanut butter together then I fold in the flaxseed meal. I add flaxseed to this to thicken it up a bit and also add some extra nutrients. As a mama-to-be, I have heard flaxseeds can help with milk supply (among so many other things for non-pregnant women) so why not? Plus you don’t even taste it – it is such a good addition.     In October, Jord and I traveled out to California for a little baby moon and I came across two different donut shops with Peanut Butter and Jelly Donuts. I regretfully did not get one and since then I have been salivating over the thought of having my favorite sweet sandwich combo in donut form.

    Allow me to present to you, Healthy Baked Peanut Butter and Jelly Donuts that are almost too good to be true.

    They are gluten-free, vegan and made with just 7 key ingredients. Plus they are ready in under 15 minutes, so ya can’t beat that.

    They turned out extra cakey, which I love. I am more of a cake-like donut person. They’re the perfect amount of sweetness and have that peanut butter and jelly flavor swirling all throughout each bite. I have made these a couple of times and once used my blueberry jam recipe mixed in and another with frozen organic blueberries. Both turned out delicious so feel free to bake them whichever way is easiest for you!

    I use a base of gluten-free oat flour and mix it with flax egg made from Garden of Life Organic Ground Flax and some full-fat coconut milk for extra creaminess.     I had no intention of making these brownies to share with you guys today.

    In fact I had another recipe idea for this post but when it came time to baking, I was all about brownies (again). I have been on a brownie kick for what feels like months. But I’m pretty sure it’s the best time of year to eat too many brownies and bake too many chocolatey treats, ya know?

    These One-Bowl Healthy Vegan Brownies are topping with peanut butter frosting is best brownie combination.

    A thick chocolatey brownie cake on the bottom topped with a rich and peanut buttery spread on top.. YUP

    I love that these brownies are made in just one bowl. Aka less mess since we are also making frosting here and I didn’t want us to clean up a million bowls.

    These brownies are also gluten-free, vegan and made with just 6 key ingredients. We use gluten-free oat flour, cacao powder, non-dairy milk and my favorite to add to brownies – melted dark chocolate chips or chunks. Such an easy way to get extra rich chocolatey flavor all up in the brownies. And it makes them even more *moist*.

    The easiest homemade peanut butter icing is on top.

    The peanut butter frosting is made with 4 ingredients like full-fat coconut milk, creamy peanut butter, tapioca flour (a must). And it’s sweetened with manuka honey making this frosting refined sugar-free. I use Wedderspoon’s Manuka Honey (obviously) and peanut butter to make the frosting. The tapioca flour cannot be subbed for anything other than arrowroot flour because it needs the thickening type of flour.

    I made these brownies and served them to some friends and fam (or I would have housed the entire batch). And everyone was saying they are a mix of brownies and devil’s food cake. Best compliment I have gotten all day! Continue Reading

    I have been craving a peanut butter cookie for what feels like months. I have yet to find somewhere around here that bakes one that is soft on the inside and a little crispy on the outside. Which is just how I like my peanut buttah cookies. There are somethings that are better off being done in the kitchen and these cookies are one of them.

    A mouthful to say and true story my mouth is full of one right now as I am eating dessert and typing about my love affair with these cookies.

    I wanted to make a cookie that was vegan, gluten-free and uses barely any ingredients so that way they are easy enough to bake after dinner when you want something quick and sweet and perfect.

    These Vegan Peanut Butter Chocolate Chip Cookies with Sea Salt are made with creamy peanut butter, sweetened with coconut sugar and use tapioca flour as the flour.

    These cookies are egg-free, dairy-free and grain-free and have no refined sugar (I promise they still taste real good!).

    I use my go-to dark chocolate bar from Hu Kitchen and cut it up into pieces as the rich chocolatey addition to the cookie. I love baking with the cashew butter bar because it adds the best flavor when it gets all melty in the oven. I had to practice crazy self control when they came out of the oven because if you remove them from the tray while hot, they will break.     But really…how have I been blogging for almost 4 years and I’m just finally sharing a Peanut Butter Chocolate Chip Cookie Bar recipe? Anytime I’m craving something for dessert there’s a 95% chance both dark chocolate + peanut butter are going to be on my plate.

    Plus cookies are always my go-to too and there isn’t anything more satisfying to me than warming up cookies and dipping them in some nut milk.

    But I have a feeling these new cookie bars will likely be your new favorite dessert recipe. Mainly for the insane dark chocolate, peanut butter combo but also because they only require a few ingredients and they’re ready in 20 minutes! Aka you can bake these after dinner if the craving strikes then.

    I love that these peanut butter cookie bars are vegan and gluten-free and SO easy to bake.

    The best accessory for any cooke recipe though is the dark chocolate involved. Today I’m using my absolute favorite, go-to allergen-friendly brand, Enjoy Life Foods. You have definitely seen their baking chocolates in your grocery store, on social media or online somewhere. They create products that are free of the top allergens like nuts, soy, dairy, wheat, etc. Always a go-to when baking for me especially with so many friends and even my brother who have a nut allergy.

    I pretty much snack on the bag as I’m baking like I used to when I was little with the chocolate chips my Mom had in the kitchen. They melt perfectly into any dessert and have just the right amount of sweetness. Plus you can use any of their baking chocolates. I always keep their dark chocolate morsels, semi-sweet chunks and semi-sweet mini chips in stock in the pantry. When I first started paying attention to the ingredients I was eating (about 5 years ago), I discovered their baking chocolates in my local Whole Food’s baking aisle and have been hooked ever since.     When the dark chocolate and peanut butter cravings strike, there is not way to ignore it.

    Even when you crave this pretty much every day like I do over here. This has been my go-to dessert combo since I was younger and my Mom would bribe me with Reese’s Pieces and peanut butter cups to behave. Or when I was at the movies and would down a large bag of Reese’s pieces (true story). The obsession is unreal.

    Today we are taking this combo up a notch by making them a bit more seasonal. We are making Dark Chocolate Peanut Butter Pumpkin CANDIES. Heck to the flipping yes.

    These homemade candies are made with all plant-based, grain-free and gluten-free ingredients. Not to mention here is no refined sugar involved and I even added some extra plant protein in them, which helps stabilize my blood sugar a bit when I eat a few of these. I love sneaking in plant-based proteins whenever I can to desserts and sweet snacks.     I have been sharing recipes on the blog for almost four years now. Why has it taken me this long to make a homemade pie recipe?! I will forever be perplexed about this.

    Sure, we have Chocolate Chip Cookie Pie and a handful of other cakes and such but as someone who loves pumpkin pie pretty much any time of the year, I’m speechless that I haven’t never made one for you guys.

    This Pumpkin Peanut Butter Pie with Cookie Crust is hands down one of the best pies I have ever eaten though. I don’t like to toot my own horn but after epically failing trying to make a “healthier” pumpkin pie a few times, when this one finally came out I was ecstatic.

    Why do I love this vegan peanut butter-y pumpkin pie so much?!

    So this isn’t just a pumpkin pie. It also has the creamy peanut butter texture and flavor combined with a cookie crust. Absolutely unreal. After you take your first bite, you will know exactly what I am talking about. The toasted pecan cookie crust topped with a creamy pumpkin peanut buttery filling that is just the right amount of sweetness. Plus there is no baking necessary for this pie. Just your food processor and a freezer to let it set a bit.

    The cookie crust is made out of Simple Mill’s Crunchy Toasted Pecan Cookies. We made a yummy crust with their soft-baked variety a few months ago, so I’m excited to have an option using their crunchy cookies now. Their pecan ones are perfect for a fall-ish pie since the pecan compliments the pumpkin flavor oh so well.

    You guys know my love affair and obsession with Simple Mills by now but incase this is your first time hearing about them, here’s the run down. Simple Mills makes a variety of grain-free and refined sugar-free baking mixes, ready-to-eat cookies and crackers.     I am so excited about this recipe today you guys – we are making MONKEY BREAD!

    I am hoping the majority of you know what monkey bread is and you are thinking back to your childhood like I am right now. If not, no worries I’m here to fill you in on the latest and give you a new homemade recipe to try at home.

    I first had monkey bread when I was in middle school at my friend’s house after a sleepover. Her mom said she was making us something called monkey bread for breakfast in the morning and my friend said it was a baked good. I have never been one to shy away from eating a baked good of sorts so I was down for anything. That next morning I woke up to the smell of heavenly cinnamon sugar bread coming from the kitchen.

    It was a fluffy circular cake with a sweet cinnamon sugar glaze of sorts on top and after one bite, I was sold.

    I don’t hear much about monkey bread these days and that is likely because it’s usually a gluttonous treat that most of us don’t eat on the regular. But that isn’t the case anymore. Today we are making a Vegan Dark Chocolate Peanut Butter Monkey Bread and it is gluten, grain-free and a lot easier to make than I anticipated.

    I didn’t even know where to begin when baking this for the first time. I knew it had to be a fluffy cake, something that you can pull apart and had a glaze of sorts on top of it before baking in the oven. I wanted to use all plant-based and grain-free ingredients, no refined sugar but I also wanted the monkey bread to taste amazing.

    I use a mix of dates, almond flour, tapioca flour and non-dairy milk along with a few other goods for the monkey bread part. The non-dairy milk here is so key. I use Elmhurst Unsweetened Almond Milk®, which is made with just two ingredients: filtered water and almonds. No gums, added sugar or sweeteners. Plus it adds the perfect amount of creaminess and flavor to the dough. You guys read all about the new kid on the blog over in the Paleo Chocolate Chip Tahini Banana Bread, but Elmhurst has been stealing the show over here in the kitchen lately. Between Jord using it in his coffee daily to me dipping cookies in it and baking and cooking with their plant-based milks, it’s getting a ton of action.
