    I don’t know about you, but ll about the 10-minute meals over here. Quick, easy and something delicious and I’m a happy camper.

    These 10-minute Spicy Salmon Taquitos have been on repeat the past couple weeks. Especially with the bub coming so soon! Finishing up work, getting the nursery together and trying to be as low key as possible over here.

    I never new taquitos could actually be healthier and still taste SO good.

    I first shared a healthy taquitos recipe a few months ago and you guys loved it! I love how crispy they can get without technically being fried and they only take a few minutes to prepare (winning). These ones are filled with wild salmon from Safe Catch, avocado, greens and a little spicy mixture with the salmon. If spicy isn’t your thing, just omit the hot sauce or only add a little bit. They will still turn out delicious.

    I also use a grain-free tortilla made with almond flour (linked in recipe below!) and it gets soo crispy and crunchy, I love it. You can use any tortilla you have though but the smaller corn ones won’t work as well and don’t fit as much in them to roll up!

    I love keeping ready-to-eat type of products on hand like Safe Catch’s Wild Salmon. They come in handy when I’m in a bind and cannot figure out what to make for a meal and they stay good for awhile. Plus they have the lowest mercury in their fish products and they hand test every single batch – it is amazing. I have my whole fam hooked on there salmon and tuna now too. The tuna would also be delicious in this recipe if you only have that on hand. Mmm maybe some type of asian-flared taquito for next time? ūüėČ

    Have you noticed my obsession with salmon burgers yet?

    Over the past year, I have made a handful of various types of salmon burgers. And the obsession just seems to be getting more and more insane every single time I make them. As someone who loves eating salmon, I am a bit particular about the quality of the salmon I eat, making it a bit harder to actually eat it these days.

    My favorite is Wild Alaskan King Salmon, the kind that is so thick and fatty and fresh. Grill it or broil it so it’s crispy on the outside and soft butter-like center – SO GOOD.

    But being that that type of salmon is both expensive and just rare to find, I love having my wild salmon cans on hand from Safe Catch. I always use their salmon in my homemade burger recipes as well as those salmon quesadillas! Safe Catch tests every single can for mercury and for both their wild tuna and wild salmon, it is the lowest mercury limit and they also use an artisan cook process. There are no added fillers or anything either – just pure salmon and it is sustainability caught (heck YES!).

    When it comes to making a quick and easy lunch or dinner, I’m your girl.

    I also specialize in cooking for 1-2 people these days since I’m usually eating solo during the week at home. J works pretty late Mon-Thurs so he eats dinner at work. That means I’m shoveling food down my throat while catching up on my book manuscript, emails and blog work.

    I like to make meals that aren’t going to mess up the whole kitchen just to make something that is 1-2 servings. I know ya feel me. As soon as I moved out of my parent’s a few years ago, I finally knew why my Mom never wanted us to make a mess in the kitchen. You have to clean it up after.. HA!

    These¬†Healthier Crispy Pan-Fried Salmon Tacos hit all my must-have’s when cooking lunch or dinner for myself. It has to be in one pan (check), filled with carbs, fat and protein (check, check, check) and it should be ready in under 15 minutes (check!). I love that these crispy tacos are filled with wild salmon from Safe Catch (a must have in my pantry) as well as some organic leafy greens, avocado and I usually serve them with whatever side dish I have prepped. Lately it has been sweet potato fries. Who am I kidding.. it is¬†always¬†sweet potato fries!

    You’ll only need your favorite tortillas, wild salmon, mayo of choice and whatever toppings you’d like to make these. Plus a little avocado oil to grease the pan and get them extra extra crispy (just how I like them!). Continue Reading

    I crave salmon burgers on the regular. A few times a month I love making different homemade burgers and salmon ones are always my go-to.

    Especially these new Paleo¬†Jalape√Īo Salmon Burgers with the dreamiest garlicky slaw. They are gluten-free, dairy-free and they’re so easy to make. Plus they aren’t too spicy (I have very little spice tolerance) but the jalape√Īo just adds that little bit of flavor to them.

    When I make homemade salmon burgers, I always use canned wild salmon. It is easy to find thanks to Safe Catch and it actually tastes amazing. My whole family is obsessed! Safe Catch is my go-to for both wild salmon and tuna. I trust their products and every single batch is tested for mercury too, making me feel comfortable eating it. You never know with fish these days, so it is so important to me to eat quality fish.

    These¬†Paleo¬†Jalape√Īo Salmon Burgers require minimal prep work but they do need to set in the fridge for at least 20 minutes so they form a bit.     If you are ever wondering what I am eating for lunch or dinner, there’s a 95% chance it is this spicy salmon quesadilla lately.

    I have been on a serious quesadilla kick for the last few weeks and I am absolutely obsessed. I love how simple and easy they are to make and they taste 100x more indulgent and gluttonous than they actually are. Coming from the person who doesn’t like traditional cheese quesadillas (I know, I’m weird), I created this healthier twist on a quesadilla to enjoy.

    I love how the possibilities on what to add inside are endless, but lately this spicy salmon combo is my go to. I use Safe Catch Wild Salmon, some avocado mayo, hot sauce and black pepper to make a “salmon salad” of sorts. Kind of like tuna salad except with wild salmon. I add it to my favorite tortillas with some goat or feta cheese or a nut-based cheese, with some leafy greens and sliced avocado.     Remember when I wasn’t eating meat? The only animal protein I was eating was from fish and eggs.

    Needless to say I was eating¬†a lot¬†of salmon. Salmon is hands down one of my favorite foods (I am weird, I know). But I still crave a piece of buttery fatty salmon. I am quite particular about the kind of salmon I eat. It can’t be too thin or it gets dry and the bones in it? Ugh can’t handle. I love those thick pieces you put under the broiler or on the grill with a little avocado oil, sea salt and pepper and gets crispy AF.

    Finding good quality, wild salmon is not always easy so I don’t get to eat it much. I also hadn’t found a canned wild salmon I liked until Safe Catch came out with theirs! Wild salmon ready to eat just like you would with their tuna. Safe Catch now has sustainability caught Wild Alaskan Pink Salmon that is mercury tested and high in omega-3’s with¬†no¬†additives. Just salmon here!

    I used to grill salmon burgers all the time that I would buy at the store. I noticed most of them are filled with icky ingredients like canola oil and random gums we don’t really need in a salmon burger. Plus it is¬†too¬†easy to make your own at home!

    Today we are whipping up these Healthy Homemade Salmon burgers. They are gluten-free, egg-free, thick and get so crispy on the cast iron skillet. You can easily spice up this recipe by adding in different seasonings, changing the breadcrumbs up, etc.  Continue Reading
