So most of you know this already but for those that don’t, I am getting married this Friday. Yes, as in two days from now on September 4, 2015 and I could not be more excited. I have been dating Jordan for 5 and 1/2 years now. We met my sophomore year in college (his junior) and have been together since. I don’t like too get too mushy/emotional on here but I cannot contain my excitement to finally marry him! I feel like the luckiest girl in the world to have found someone like Jord and to know I’ll be with my best friend forever.

I think the cool kids call these “slutty brownies” but for one I am not cool and two my mom wold 100% have something to say if I had a recipe with “slut” in it – ha!
So we’re going with The Best Chocolate Chip Cookie Stuffed Brownies and I am feeling really good about these bad boys. They are gluten-free and vegan and made with such easy ingredients you will see.
What I also love about these is that they sound 100x more gluttonous than they actually are. When you think about adding cookies into brownies, most would say “whoa that’s crazy” but when you add a thin layer of these Crunchy Chocolate Chips Cookies from Simple Mills on the brownie batter, you’ll see they really aren’t as crazy as you think.

Or shall I say, say hello to the new way of eating pancakes around here. These Gluten-free Pancake Roll Ups are absolutely insane. They get extra crispy on the outside and have this dreamy cake-like consistency on the inside.
I am all about that pancake life as you guys know and these pancake roll ups are one of my latest favorite ways to enjoy my hot cake obsession. They remind me of a crepe in many ways but still have that thicker and more pancake-like feel to them. You can mix in anything you want to the batter like dark chocolate chips, blueberries, anything! And once they are cooked, I love smearing some nut butter and filling the cake with some fruit too.
The absolute must-have for this recipe though is Simple Mills Pancake + Waffle Mix. You guys know my obsession with Simple Mills-anything and their pancake mix is unreal. It is made with all grain-free, gluten-free and dairy-free ingredients and the base of the mix is almond flour. I love how they use all ingredients that would go into homemade pancakes too, and they make it 10x easier to whip up a stack when you are craving some!

Ya, we are back today with a NEW brookie recipe for you. Except this time there are a few new twists on the original recipe I shared.
For starters, this recipe is about 85% brownie and 15% cookie. I wanted to make something a little more decadent and chocolate-y than the usually half cookie/half brownie portion in a brownie cookie recipe. Plus the brownie in this is a lot fudgier than usual. It’s almost like a moist cake of sorts and when you bake it in cupcake/muffin form, it really makes it even more cakey than I imagined – I am obsessed!
This healthy brownie recipe is grain-free, gluten-free and dairy-free and SO fudgy.
I use a mix of almond flour, cacao powder and melted dark chocolate (along with a couple other goods) to get that extra dense and chocolate-flavor.
But now let’s chat about the peanut butter cookie topping. Some may say this is “cheating” but I personally think this is one of the smartest baking hacks ever. There comes a time when you are in a rush or just don’t feel like making cookies from scratch and I don’t blame you. As a soon-to-be Mom, I have a feeling that will be the new normal over here.

Chocolate Chip GINGERBREAD Loaf is finally here just in time for your binge baking sessions to start in the kitchen, right?!
I don’t dabble in the gingerbread world too often but when I had so many requests for gingerbread cookies of sorts, I knew something needed to go down in the kitchen. I decided to switch things up a bit instead of cookies to enjoy gingerbread. Yes, gingerbread cookies are amazing but I also wanted to make something that can be good for a holiday brunch or breakfast type treat too.
This Vegan Chocolate Chip Gingerbread Loaf is gluten-free, grain-free and has just the perfect amount of chocolate to gingerbread ratio. It is topped with a homemade chocolate crumb topping (I can eat the crumb topping solo, it’s so good). The crumb topping is also completely sugar-free (no coconut sugar, maple syrup or anything!). I wanted to keep it on the lighter side since the gingerbread loaf itself has dark chocolate chips and is sweetened with coconut sugar already.
For the base of the gingerbread loaf, we are using Simple Mill’s Vanilla Cake Mix. Sure, some may say that is “cheating” for a homemade recipe but most are down to cut corners and save some time in the kitchen and I have you covered! Simple Mills makes the most amazing grain-free, refined sugar-free and almond flour-based baking mixes. You are probably rolling your eyes and laughing since if you are familiar with the blog, you know they are a staple in my life.

When I was at Trader Joe’s earlier this week, I bought so much butternut squash and a couple days later realized I have zero idea on what to even make with it. I roasted it up in the oven but as I have spoken about here, I haven’t been feeling roasted veggies during my pregnancy. It is so random – I know.
