    I feel like I have been neglecting my main boo, banana bread, recently. I am still in awe of how many of you make the Paleo Chocolate Chip Banana Bread daily. It blows my mind and warms my heart at the same time when I see so many of you enjoying it as much as I do. It is a staple in our freezer and in all honesty, not many banana breads ever top it.

    Whenever someone asks me what my favorite recipe on the blog is, I always feel odd answering and picking one recipe. It is like picking a favorite child, ya know? But I always respond and any of the banana breads. I feel less guilty that way since there are a handful of ones to choose from.

  • My Favorite Recipes Using Coconut Flour

    Sharing My Favorite Coconut Flour Recipes that Anyone Can Make.

    Coconut flour is one of those ingredients that you are either hesitant on buying because you don’t know what to do with it, but you know it is better for you. Or you have it sitting in the pantry or fridge and are intimidated to make anything with it.

    Well that is going to end today friends! I am filling you in on all the details of coconut flour, why I use it and where I buy it. I also am sharing my favorite recipes from the blog that use coconut flour in them, so you can get over the hump and make some coconut flour magic!

    Okay so first things first, the details on baking and cookie with COCONUT FLOUR!

    1. Coconut flour is a grain-free, nut-free, paleo flour that is lower in net carbs and can also be used in both sweet and savory recipes
    2. Coconut flour should be kept in the fridge once it is opened to help it stay fresh longer and prevent it from spoiling
    3. Buying using coconut flour, you are adding more fiber, protein and vitamins to your food. There are over 7 grams of protein in 1/4 cup,, making it beneficial for blood sugar levels
    4. I have found that baking with only coconut flour for vegan recipes can be a challenge. It works best when you combine it with another flour like almond for egg-free recipes.

    Coconut Flour FAQ:

    • How can I substitute coconut flour in a recipe?  Coconut flour is not a 1:1 sub for regular flour. It is much thicker. You will need about 1/2 or less of the amount of coconut flour as you would oat flour or regular flour. Little goes a long way 😉 Coconut flour absorbs liquid much more than your usually flour, so double the liquid as well. And that also means you should be doubling the amount of eggs you use!
    • Where do you store your coconut flour? In the fridge! It stays fresh longer there. I usually buy larger containers of it too to keep on hand and store it with my other grain-free flours in the fridge.
    • Does coconut flour tastes like coconut? It has a subtle coconut taste, but it isn’t as overpowering as coconut oil or using coconut butter. Especially when you combine it with other ingredients. It does have a bit of a different texture than your usual grain-based flour though.

    December is fully dedicated to making an insane amount of cookies to bake with you guys.

    Starting with these Gluten-free Chocolate Chip Monster Cookies that are so good that Ezra’s nanny’s grandchildren, my family and my friends have been requesting them over and over and over again.

    To be honest, I would refer to these as some sort of kitchen sink or M&M cookie. But after polling my Instagram community about what kind of cookies you guys are craving, everyone said “monster cookies”.  So whatever you want to call them is cool with me. All that matters is they taste kick a$$ and have the most epic line up of flavors.

    These healthier monster cookies are going to be one of those recipes I bake for Ezra and his friends when they are over. Not to mention, they are so simple and easy to make too.

    You only need 8 ingredients and 30 minutes to whip these healthier Gluten-free Monster Cookies up.

    You will want to stock up on my beloved If You Care baking sheets for all of your baking/cooking needs this holiday season. And really any season if you ask me.

    I have been going through their baking sheets and sandwich bags like this is no tomorrow. The sheets help prevent the cookies from sticking. This cookie dough is a little sticky so you will definitely want to line your tray with something. Then I use the sandwich bags when I gift these cookies to friends and family.

    This won’t come as a surprise to most but, I have made and eaten a lot of sweet breads in my life.

    There my go-to when I am in the mood for baking something and they’re my favorite to keep around for breakfast, sneaking and dessert. It’s like the trifecta over here.

    Today’s bread is one that has been requested for what feels like forever. I shared a Paleo Lemon Berry Pound Cake last year and since then, many of you beautiful humans have been asking for a vegan and nut-free version. And today is the day, friends!

    This healthy bread tastes like blueberry muffins and lemon poppy seed muffins in one!

    We have a healthy Lemon Blueberry Breakfast Bread that is gluten-free, nut-free and plant-based. It is extra cakey and “moist” and full of flavor, but just the right amount of lemon. I’m not a huge fan of when lemon overpowers a recipe and prefer just the subtle splash of it in each bite. If you do like things more lemon-y just add a couple more tablespoons of lemon juice or zest.

    I use ingredients for this that you likely already have in your pantry if you are used to baking recipes from the blog. We can use either gluten-free oat flour, spelt flour, brown rice flour and probably even an all purpose flour if you prefer. I haven’t tested grain-free ones here (this recipe is grain-free though).     When I tell people that my brother has a nut allergy, they look at me like I am crazy! I grew up loving peanut butter everything and eating tons of PB&J sandwiches, Reese’s etc. but we always had to be extra cautious in the kitchen for Seth just incase.

    Nowadays there are a lot of schools that don’t allow nut-based products in them and more and more people have nut allergies. This can definitely be a struggle trying to eat healthier since many things have almond flours or nut butters in them. But after testing recipes for the past few years, I have a handful of recipes on the blog that are healthy and delicious (at least I think so!) while also are still nut-free.

    I find it is really easy to also sub most recipes to make them nut free-friendly. You can use tahini or sunflower butter instead of nut-based butters like peanut and almond. Gluten-free oat flour and spelt flour are two of my personal faves to go to for nut-free flours (and coconut too if you can eat coconut-based products!). Any recipes on my blog that call for almond milk or any nut milk can easily be subbed 1:1 with coconut milk, oat milk, hemp milk, anything!

    When it comes to brands, I love that Enjoy Life Food’s is free of the top allergens (including nuts) so anyone with severe allergies can eat these products. Their baking chocolate is my absolute fave!

    Below you will find a handful of my go-to nut-free recipes when I’m making something for anyone with a nut allergy or even if they just don’t enjoy the taste. There is a mix of cookies, cinnamon rolls and various other sweet treats for you guys to whip up!

    As if we need a season as an excuse to eat cookies! But I know the holidays are all about the baking and usually all about baking COOKIES! Who can blame you? They are the the most comforting and usually the easiest dessert to whip up and there are so many different kinds of cookies to make, which leads to us baking all the kinds.

    I found myself baking 8 dozen cookies the other day in preparation for this blog post and I’m not going to lie, I saw my future in front of me as this is likely what I will be doing with my kids every holiday season. I love nothing more than baking and eating cookies all year around but around the holidays it really is a totally different vibe. You can gift them to friends and family for a nice homemade gift. Bring them to the office to spoil your co-workers or just bake them for yourself on a Friday night and watch Real Housewives reruns because that sounds amazing to me right now. During this season though it’s usually Home Alone 2, You’ve Got Mail and Love Actually.

    If I had to bake one thing for the rest of my blogging career, it would likely be cinnamon rolls.

    They are the comfort food of my dreams. The recipe that always challenges me in the kitchen but once it is perfected, there is no better feeling. Especially after making paleo cinnamon rolls that didn’t end up as biscuits like they usually do over here.

    These Paleo Golden Cinnamon Rolls with Chocolate Filling are a bit different than the usual cinnamon roll consistency. They are a bit more doughy and the dough itself was very different than when you bake my Homemade Blueberry Cinnamon Rolls or Healthy Vegan Cinnamon Rolls. We use a mix of three grain-free flours: almond flour, coconut flour and tapioca flour (I do not recommend subs here) and the consistency is very different compared to using gluten-free oat or spelt flour.

    When baking them, don’t feel discouraged if the dough isn’t rolling perfectly. My certainly didn’t but I pressed extra dough on the sides and they still turned out so good!

    We have a new banana bread recipe on the blog friends. But it’s not your usual banana bread recipe…

    For starters it’s not the traditional loaf form and instead made into bars. Making them perfect to snack on all day every day. Plus they are a combination of two of our favorites: crumb cake AND banana bread. Oh and don’t forget the dark chocolate.

    The bottom layer of these bars is a moist (accurate word) banana cake mixed with dark chocolate then on top a slightly sweetened chocolate crumb topping. As soon as I snagged a few bites of the crumbs before they even baked in the oven, I know it was going to be something good.

    These Chocolate Crumb Banana Bread Bars are vegan, gluten-free and nut-free. They are also packed with extra nutrients thanks to Garden of Life flaxseeds, chia seeds and extra virgin coconut oil. I love that all of Garden of Life products are 100% organic and made with quality ingredients. You guys know about my obsession for all of their food, supplements and now their new essential oils.     As a self-proclaimed cookie monster, I have a new favorite cookie in my life.

    Which I likely say after every single cookie recipe, but just go with it. I have passion when it comes to those dreamy cookies especially ones topped with melted dark chocolate chunks and that satisfy my sweet tooth while also fill me up on good ingredients.

    These One-Bowl Vegan Chocolate Chunk Cookies are epic.

    They are sweetened with a little maple syrup and I use dark chocolate that is sweetened with coconut sugar, making them clear of any refined sugars. I am all about moderation so obviously I do eat cane sugar once in awhile but if I’m going to have cookies often, I want them to be made with wholesome goods and won’t spike my blood sugar like crazy.

    These cookies are so soft. They will melt-in-your-mouth and have that crunchier outside and cakey moist inside. They are a bit thicker and more cake-like than your traditional cookie and I’m into it.     MINI banana bread loaves are here, finally. After making some of these for a baking class up in Boston, I have been so excited to share these Mini Vegan Chocolate Chip Banana Bread Loaves with you. They are plant-based, nut-free and made with simple and delicious ingredients.

    There are dozens of banana bread recipes on the blog now and this is the first made into mini loaves. You can really take any banana bread recipe and bake it into mini loaves (just the serving size and bake time will vary), but I love the consistency of this recipe! It uses both ripe bananas and plant-based yogurt (I used cashew) to make the loaf moist and the best texture.

    I also used a sunflower seed butter to make this nut-free but you can really use any nut butter you prefer!

    For the flour I used oat flour made from One Degree Organics Sprouted Rolled Oats. It is too easy to make oat flour (just add to food processor and pulse until in flour form) and also added some of their Sprouted Rolled Oats as is into the recipe. You can also use their Sprouted Spelt Flour instead One Degree Organics products are an absolute staple in my kitchen. We use their sprouted breads, tortillas, granolas and cereals pretty much daily in one way or another. I love how you can trace every single product back to where it was made and that they offer all sprouted ingredients, which are easier for our digestive systems. Read more about them here!
