    Do you believe me when I tell you that these are the easiest cake batter blondies ever?

    Ya, I would be questioning that statement too, but I promise these are so good. When I took my first bite, I almost thought they were fake. Like it was too good to be true or something.

    A dessert that tastes like cake batter but is low in sugar, grain-free, dairy-free and only made with 5 ingredients? What gives?

    Believe the hype friends because these blondies are absolutely insane and delicious and everything you wanted and more.

    Did I mention these taste like healthy sugar cookies too?

    Yup. It is true. Sugar cookie meets funfetti cake meets cake batter all wrapped up in one. And the ingredients are on point. A few of the key ingredients found in this recipe: cashew butter, maple syrup, almond flour and eggs. You will also see that I snuck in some Vital Proteins Vanilla Collagen Creamer for an extra protein boost. Plus it adds some health benefits to cake batter (these just keep getting better).     A few years ago, I shared a Double Chocolate Chip Banana Bread here on the blog. Not only was the recipe mediocre but the photos were pretty unappetizing if you ask me! I then found myself scrolling and looking at other older recipes with an urge to tweak them.

    This recipe is the first of many I’m going to be recreating from the blog. And at this point we’re talking 4+ years ago some of these are from, and I like to think I have brushed up on a few more kitchen and photo skills since then 😉

    Ok ok but this healthy Double Chocolate Chip Banana Bread..

    This bread is a mix of devil’s food cake and banana bread in my opinion. The consistency is extra *moist* and has the best chocolatey flavor to it. Because I added in melted chocolate to the batter plus some cacao powder and chocolate chips. Such a game changer!

    Then there’s the addition of Vital Proteins Hot Cocoa Collagen Latte. Hands down one of my favorite products they have ever created. It is amazing to add just to your smoothies or warmed milk etc. for a drink of sorts but I love to bake with it.

    But what does collagen even do to a recipe? Adding collagen to a recipe doesn’t change the consistency at all but it does add some extra nutritional benefits and protein, which is always a plus if you ask me.     Is there anything better than a big a$$ chocolate chip BROWNIE COOKIE?!

    Ya, I’m going to go with a big fat no to that question. Especially when it is extra fudgy like this one. A complete combination of a brownie and a cookie in one recipe. And did I mention that it is just one big serving? Sure you could go ham on this yourself, but it usually serves two over here. I eat one half, then save the rest for later (or share with J if he’s lucky).

    This recipe was inspired but my Giant Paleo Chocolate Chip Cookie from a couple years ago. I recently made it again and it was such a hit with you guys. I always know what recipes you enjoy the most when I see how many people are making it themselves and tagging me. This was for sure a winner with the rachLeats community and I’m beyond happy about it. I think you guys will love this Giant Fudgy Chocolate Chip Brownie Cookie just as much.

    The recipe itself is gluten-free, dairy-free and is only sweetened with mashed banana and chocolate chips. No other sugar! Plus I add in some of Vital Protein’s new Hot Cocoa Collagen Latte, which is actually insane. You can make a beverage with it or you can add it into any of your favorite chocolatey recipes like I did with this one.     I mean, is there ever a time that banana bread isn’t the most satisfying flavor combination imaginable? Especially when we’re talking all things breakfast.

    Toady we are making the easiest 6-ingredient Paleo Banana Breakfast Pudding and it has been on the weekly rotation over here. When I gave some to J for breakfast, he called me from work asking where I bought it from. I could have been insulted by that comment but instead took that as a compliment that he really was enjoying it.

    So what exactly is oatmeal if there are no grains or oats in it?!

    I like to think of this as a paleo/grain-free oatmeal meets pudding type of recipe. It is so simple and easy to make and is very filling and satisfying for breakfast. Plus you can whip up a big batch and enjoy it throughout the week.

    I use a base of nut milk, banana, almond flour, coconut flakes, flaxseeds and collagen peptides for some extra protein. I find that if I don’t have just the right combo of fat, carbs and protein in the morning, I’m starving in an hour. For this recipe I love to use Vital Protein’s Mocha Collagen Creamer. The smell of that creamer alone has me drooling. Being someone who isn’t a fan of coffee, I was hesitant on buying their creamers but now I love baking with them and using them in my oatmeal.     When the only way you’ll eat carrots is when their hidden in a dessert, you have to get creative in the kitchen 😉 And this Gluten-free Pecan Carrot Cookie Cake is absolutely insane and officially my go-to dessert right now. It isn’t often a dessert recipe satisfies me that doesn’t have chocolate in it but this recipe hits the spot.

    This carrot cookie cake has a crunchy outside and that soft gooey cookie center we all love. Plus you can top it off with some ice cream of choice or even some creamy coconut yogurt for a little fancy snack or dessert actions.

    Did I mention you only need to dirty one bowl to make this recipe too? Easy prep, easy clean up and you are set.

    This healthy carrot cake cookie recipe is filled with all my favorites!

    I also add in some of my favorite Vital Protein’s collagen peptides. You guys know my obsession with collagen peptides and baking with it. I love sneaking it into recipes because it adds extra protein and dissolves right into the batter. I use the regular collagen peptides here so it doesn’t add any flavor either.
