Addicting Gluten-free Cinnamon Peanut Butter Granola with big CLUSTERS! This vegan granola recipe is absolutely delicious and so easy to make.

Ingredients

Scale
  • 3 cups gluten-free rolled oats
  • 1/2 cup unsweetened coconut shreds
  • 1/2 cup crushed peanuts
  • 1/4 cup flaxseed meal
  • 3 tablespoons chia seeds
  • 2 teaspoons cinnamon
  • 1/3 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/3 cup creamy peanut butter (code RACHL for free shipping!)
  • 1/3 cup liquid coconut oil
  • 2 tablespoons hot water
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350 degrees and line a large baking sheet with parchment paper
  2. In a large bowl, mix together the oats, coconut, peanuts, flaxseed meal, chia seeds and cinnamon
  3. In a small bowl, mix together the coconut sugar, maple syrup, peanut butter, coconut oil, hot water and vanilla extract
  4. Pour the wet ingredients onto the dry ingredients and mix well to evenly coat
  5. Add the granola to baking sheet and press down so the ingredients are in one layer, stuck together
  6. Bake in oven for 15 minutes then rotate tray and bake for another 15 minutes
  7. Allow the granola to cool for 15 minutes
  8. Break the large cluster into smaller pieces and enjoy!

*Store granola in airtight container for a week or fridge for 2-3 weeks
