Almond Flour Chocolate Chip Cookies (paleo + vegan)

Healthy chocolate chip cookies made with all paleo, gluten-free and dairy-free ingredients. Plus no refined sugars! The most doughy delicious chocolate chip cookie!

Ingredients

Scale
  • 1 flax egg (1 tablespoon ground flax + 3 tablespoons warm water)*
  • 1/3 cup creamy nut butter
  • 1/3 cup maple syrup
  • 3 tablespoons liquid coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cup almond flour
  • 3 tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 cup dark chocolate chips (code RACHL for free shipping)

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper 
  2. In a large bowl, mix together the egg, nut butter, maple syrup, oil and vanilla extract until smooth
  3. Mix in the flours and baking powder until well combined then fold in chocolate chips
  4. Spoon about 2-3 spoonfuls of dough into your hands to form cookie and add to baking sheet
  5. Bake in oven for 12-15 minutes
  6. Allow the cookies to cool (if you can) then enjoy!

*Can sub pasture-raised egg

**Store leftovers in container for 5 days or freeze for a couple months
