This Baked Egg Tortilla is the ultimate egg hack for your breakfast, lunch or dinner. All in one and it is incredibly easy to make and you can use any mix-in’s you want.
This is the most customizable, crave-able recipe to eat any time of the day! It is great for breakfast of course, but it’s also delicious for lunch or dinner too. You can use whatever ingredients you have in your fridge or pantry to make it. And it tastes like a giant breakfast taco with less effort to make.
I also love that this dish doesn’t dirty up the kitchen like eggs usually do. Just add all the ingredients into a baking dish and you are set. You don’t dirty skillets or your stovetop to prepare it.
You can make this a vegetarian baked egg tortilla or add in some bacon or sausage to make it heartier too. I love using whatever ingredients I have on hand and it’s a great “everything but the kitchen sink” kind of dish.

What ingredients are in this baked egg tortilla recipe:
- Large flour tortilla or 2 smaller tortillas – I used these 2 of these gluten-free ones. I think corn tortilla would get too crunchy
- Eggs – cracked in a bowl but not whisked
- Any mix-in’s you want: chopped spinach, bacon, peppers, cheese
- Sea salt and black pepper to taste
How to make a baked egg tortilla in the oven:
- Grease a small 5×5 baking dish (I used one like this)
- Add the tortillas into the baking dish with edges coming up the sides of the dish
- Next add the eggs and mix-in’s and seasons then bake in oven for about 15-20 minutes (depends on how you like your eggs!)
- Gently remove tortilla from dish if desired and enjoy! Or carefully eat in baking dish

- What do can I add to this egg bake? Really anything you want! Some bacon, sausage, veggies, and cheese are popular ideas.
- Can I use a corn tortilla? I don’t recommend it because it’ll be too hard when baking. For best results use a flour or grain-free flour tortilla.
- Can I prep this recipe ahead of time? For optimal consistency and taste, I don’t recommend it. It tastes best made day of and eaten while warm.
- Is this a good recipe for kids? Yes! If your kids like eggs, it definitely is. My 2 year old loves this dish.
