This Baked Egg Tortilla is the ultimate egg hack for your breakfast, lunch or dinner. All in one and it is incredibly easy to make and you can use any mix-in’s you want.

Ingredients

Scale
  • 1 large flour tortilla or 2 smaller tortillas (I used these 2 of these gluten-free ones)
  • 2 eggs, cracked in a bowl but not whisked
  • Any mix-in’s you want: chopped spinach, bacon, peppers, cheese
  • Sea salt and black pepper to taste

Instructions

  1. Preheat oven to 375 degrees and grease a small 5×5 baking dish (I used one like this)
  2. Add the tortillas into the baking dish with edges coming up the sides of the dish
  3. Next add the eggs and mix-in’s and seasons then bake in oven for about 15-20 minutes (depends on how you like your eggs!)
  4. Gently remove tortilla from dish if desired and enjoy! Or carefully eat in baking dish

Notes

*This tastes best freshly cooked. I don’t recommend this leftover for taste/consistency
