These Broccoli Cheddar Fritters are absolutely delicious. Crispy savory pancakes that are made with all simple healthy ingredients that kids and adults both love.

Yield: Makes about 8 fritters 1x

Ingredients

Scale
  • 4 cups broccoli florets, steamed
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup almond flour
  • 2 large eggs, whisked
  • 1 garlic clove, minced
  • 1/2 tsp paprika
  • Sea salt and black pepper to taste

Instructions

  1. Chop up the broccoli then add to a large bowl and combine with other ingredients
  2. Add about 1 tbsp of oil to a large pan or skillet over medium-high heat to warm
  3. Spoon roughly a 1/4 cup of batter into the pan and flatten with back of spoon or spatula
  4. Cook for 2-3 minutes then gently flip and cook for another 2-3 minutes or until crispy
  5. Repeat until batter is all used (don’t overcrowd the pan!)
  6. Serve while warm with desired sauces or condiments like honey mustard or ketchup

Notes

*Store in fridge for 5 days or freezer for 2 months. I reheat in skillet or microwave
