Broccoli Pesto Pasta (gluten-free)

This Broccoli Pesto Pasta is such an easy and delicious dinner recipe for the whole family to make. My kids love it too and it’s gluten-free, nut-free and perfect to meal prep.

Yield: Serves 4

Ingredients

Scale
  • 8 ounces cooked gluten-free pasta of your choice
  • 2 cups broccoli florets, steamed 
  • 1 cup basil leaves, lightly packed
  • garlic cloves
  • 4 tablespoons pumpkin seeds
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons water
  • Sea salt and black pepper to taste
  • 1/2 cup Parmigiano-Reggiano, grated

Instructions

  1. Add the broccoli, basil, garlic, pumpkin seeds, oil, water, salt and pepper and cheese to a food processor or blender and blend until smooth and fully combined
  2. Pour the broccoli pesto on top of pasta and mix well and enjoy!

Notes

*If you have leftover pesto pasta, add to fridge for 5 days. If you have leftover pesto (not pasta) add to ice cube tray and freezer for another use!
