Buffalo Blue Cheese Stuffed Meatloaf recipe! This is the ultimate meatloaf recipe to make to spice things up a bit. Made with all gluten-free and healthier ingredients.

Ingredients

  • 1 lb ground beef or ground chicken (either works!)
  • 1 egg
  • 1/2 onion, chopped
  • 1 garlic clove, minced
  • 1/2 large carrot, chopped and peeled
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • Sea salt and black pepper to taste
  • 1/4 cup + 1/4 cup mild buffalo sauce
  • 1 cup almond flour
  • 1/2 cup + 3 tablespoons blue cheese crumbles

Instructions

  1. Preheat oven to 375 degrees and line a baking sheet with parchment paper
  2. In a large bowl mix together beef, egg, onion, carrot, spices and buffalo sauce well
  3. Next mix in the almond flour to the mixture
  4. Add 1/2 the meat mixture onto the baking sheet and form a large rectangle using your hands (about 1 inch thick)
  5. Crumble 1/2 cup of the blue cheese in the center then cover with remaining meat and pinch the sides to create a large loaf
  6. In a small bowl, mix together 1/4 cup buffalo sauce and the 3 tablespoons blue cheese and brush on top of the loaf
  7. Bake in oven for 45 minutes or until meatloaf reaches 160 degrees for beef and 165 degrees for chicken  then broil for 1 minute
  8. Allow the loaf to cool then slice and enjoy!

*Store leftovers in fridge for 5 days or freezer for 2 months
