avocados (ripe)

red pepper, diced
1
zucchini, chopped
1
yellow squash, chopped
1
shallot, chopped
3 tablespoons

Prevent your screen from going dark
Instructions
In a medium bowl, add pepper, squash, zucchini and shallot with the dressing and mix well
Heat your grill or grill pan on medium-high heat and grease if needed
Add veggies to the grill and cook for about 5-10 minutes or until your liking (you can also cook in a pan over the stove)
Remove from heat and begin avocado prep
Cut the avocados in half and grease with oil spray or brush with oil
Cook each avocado half for 3 minutes on each side
Remove from heat and fill with cooked veggies
Enjoy immediately!
*This tastes bests day of as avocado will brown
