Charred Veggies with Grilled Avocado (vegan + grain-free)

Ingredients

Scale
  • 3 avocados (ripe)
  • 1 red pepper, diced
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 shallot, chopped
  • 3 tablespoons Primal Kitchen Greek Dressing

Instructions

  1. In a medium bowl, add pepper, squash, zucchini and shallot with the dressing and mix well
  2. Heat your grill or grill pan on medium-high heat and grease if needed
  3. Add veggies to the grill and cook for about 5-10 minutes or until your liking (you can also cook in a pan over the stove)
  4. Remove from heat and begin avocado prep
  5. Cut the avocados in half and grease with oil spray or brush with oil
  6. Cook each avocado half for 3 minutes on each side
  7. Remove from heat and fill with cooked veggies
  8. Enjoy immediately!
  9. *This tastes bests day of as avocado will brown
