If you’re looking for a healthy and refreshing salad, this gluten-free chopped Chinese chicken salad is it! It is packed with protein and veggies and is so easy to make with quick dressing.

Ingredients

Salad:

  • 2 cups cubed cooked chicken
  • 4 cups romaine lettuce
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup sliced almonds
  • 1 small mandarin orange, diced
  • 2 green onions chopped
  • Optional sesame seeds for garnish

Sesame Dressing:

  • 3 tbsp coconut aminos
  • 3 tbsp rice vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tbsp toasted sesame oil
  • 1 garlic clove peeled
  • 1/2 inch ginger
  • 1/2 tsp ground black pepper
  • 1/4 tsp sea salt

Instructions

  1. Combine all ingredients for the sesame dressing in a blender and blend all the dressing ingredients until smooth and creamy
  2. In a large mixing bowl, combine all ingredients for the salad, except sesame seeds
  3. Pour the dressing over the salad when ready to serve, and toss together to coat
  4. Sprinkle with sesame seeds before serving

Notes

*Store in fridge for 3-5 days
