Cream together sugar, eggs, butter and vanilla extract until smooth
Mix in flour and baking soda until dough is formed
Fold in chocolate chips then add dough to fridge for 30 minutes to set
Preheat oven to 350 degrees and line a baking sheet with parchment paper and/or grease well
Add a small tablespoon of dough to the baking sheet to form cookie (I don’t roll them up – just drop the cookie dough with the scooper) and repeat for dough. Leave about 2 inches of space between each cookie as they’ll spread
Bake in oven for 8-10 minutes or until the edges are *just* about to be golden brown. We want these as soft-baked
Allow the cookies to cool on a cooling rack and enjoy!
