This copycat Taco Bell Mexican Pizza is insanely delicious, gluten-free, easy to make and a healthier homemade twist on the Mexican Pizza from Taco Bell.

Mexican pizza:

Optional toppings:

  • Guacamole
  • Sour cream
  • Tomatoes
  • Scallions

Taco meat:

  • 1 lb ground beef (or turkey/chicken)
  • 2 tablespoons taco seasoning (we do a blend of onion powder, garlic powder, chili powder, cayenne and paprika!)

Instructions

To make taco meat:

  1. First cook taco meat by adding ground beef into large skillet
  2. Break meat into larger pieces and let is brown for 3-4 minutes
  3. Season with taco seasoning and break meat into smaller pieces with a spatula
  4. Remove from skillet with meat is fully cooked through

To assemble Mexican Pizza:

  1. Preheat oven to 375 degrees F and spray tortillas on both sides with cooking spray
  2. Place one tortilla on flat surface and spread refried beans on top followed by taco meat and cheese
  3. Place the next tortilla on top and spread across salsa or sauce then sprinkle more cheese on top
  4. Bake on a baking sheet wire rack for about 8 minutes or until tortilla is crispy and cheese is melted. I also like to broil for 30-60 seconds before removing from oven
  5. Serve warm with desired toppings!

Notes

*Serve while warm. Store leftovers in fridge for 5 days
