Creamy Roasted Red Pepper Pasta made with all gluten-free ingredients for a quick and easy dinner to make in under 10 minutes.

Ingredients

Scale
  • 12 ounce jar roasted red peppers (liquid drained)
  • 1/2 cup cooking broth (veggie or chicken)
  • 1 cup full-fat coconut milk (with the cream on top of can!)
  • 1/2 cup fresh basil leaves
  • 2 garlic cloves
  • 1/2 teaspoon sea salt
  • 1/2 cup grated parmesan cheese
  • 1 lb pasta of choice (I used this gluten-free one)

Instructions

  1. Boil water and cook pasta per instructions on packaging
  2. Add the sauce ingredients to blender or food processor and blend until smooth
  3. Pour over warm pasta and enjoy!

Notes

*Store leftovers in fridge for 5 days or freeze leftover sauce for 2 months
