Crispy Goat Cheese Fritters (gluten-free)

These Crispy Goat Cheese Fritters are an easy and delicious and made with all gluten-free ingredients. Makes for a crave-able appetizer or addition to your salads (my favorite!).

Ingredients

Scale
  • 8 ounces plain goat cheese log (or two 4-ounce logs)
  • 1/2 cup gluten-free panko breadcrumbs (I used these crackers and crushed them up in food processor)
  • 1/3 cup tapioca flour or arrowroot flour
  • 1 egg
  • Frying oil – olive oil or avocado oil I usually use
  • Optional: honey for topping!

Instructions

  1. Slice the goat cheese log into 1-inch slices (I got about 5 per 4-ounce log)
  2. Roll each piece into a ball with the palms of your hands and set aside
  3. Add the egg to a small shallow bowl and whisk
  4. Next add the tapioca flour to another shallow bowl and another for the breadcrumbs (so you have 3 bowls!)
  5. One by one add the goat cheese ball to tapioca flour then whisked egg, dripping off excess, then the breadcrumbs
  6. Set each goat cheese ball onto a plate then add to freezer to set for 10-15 minutes (this is key!)
  7. Fill a medium skillet with 1/2 inch of oil and heat over medium heat
  8. Add each fritter to the skillet (leaving space between each – if you need to do two batches, that’s ok!)
  9. Cook for about 1-2 minutes then turn over to other side for another minute or so. You will know they are done when the cracker coating turns golden brown (add more oil as needed)
  10. Serve the goat cheese fritters with drizzle of honey and enjoy!

Notes

*Serve while warm. Store leftovers in fridge for 3 to 5 days. Reheat in skillet as needed!
