These Crispy Parmesan Delicata Squash Rings are absolutely delicious! Such an easy recipe to make for an appetizer, side dish or whenever. Made with all gluten-free and grain-free ingredients.

Ingredients

Scale
  • 2 small delicata squash
  • Olive oil
  • 2 large eggs, whisked
  • 1 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • Sea salt and black pepper
  • 1/2 cup tapioca or arrowroot flour
  • For serving: marinara sauce, pesto, your desired dipping sauce!

Instructions

  1. Preheat oven to 425 degrees and line a baking sheet with parchment paper
  2. Wash and dry the squash then add to cutting board and slice into 1-1 1/2 inch thick rounds
  3. Remove seeds and add squash to baking sheet and drizzle with olive oil
  4. Add to oven to bake for about 5 minutes as you prepare the other ingredients
  5. In a shallow bowl, whisk together 2 eggs
  6. In another small bowl, mix together the cheese and spices
  7. And finally in a third bowl, add the arrowroot flour
  8. Next dip a squash round into arrowroot flour then into eggs, allowing excess to drip off then finally coat in cheese and spice mixture
  9. Add to baking sheet and repeat with remaining ingredients (you may need to add more cheese and spices and flour – depends on how many rings you made!)
  10. Add to oven to roast for about 15 minutes (flipping halfway through) or until crispy!
  11. Allow the rings to cool then enjoy with desired dips
