These Crispy Quinoa Feta Fritters with Labneh Dill Dip are such an easy side dish or appetizer to make. They’re gluten-free, nut-free and can be ready in under 20 minutes.

Crispy quinoa feta fritters:

  • 2 large eggs
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1/3 fresh parsley, chopped
  • 1/2 cup tuscan kale, chopped (I added this in for extra veggies, it’s optional)
  • 2 garlic cloves, minced
  • 1/2 cup red onion, chopped
  • 1/2 cup gluten-free breadcrumbs or 3/4 cup almond flour
  • Sea salt and black pepper to taste
  • 2 tablespoons avocado oil

Labneh Dill Dip:

  • 1 lemon
  • 1/2 cup labneh
  • 1 teaspoon dried dill or fresh dill
  • Sea salt and black pepper

Instructions

  1. In a large bowl combine the eggs, quinoa, feta cheese, parsley, tuscan kale, garlic cloves, red onion, breadcrumbs and sea salt and black pepper until combined
  2. Using a 1/3 measuring cup scoop out the batter and form into patties by packing firmly into measuring cup and add to plate while you form the rest
  3. Warm a large skillet with avocado oil over medium-high heat
  4. Add the fritters to the skillet and cook over medium heat for 3 to 4 minutes
  5. Gently flip then cook again for 3 to 4 minutes or until golden and ready
  6. While the fritters cook, mix together the dip ingredients
  7. Serve fritters with dip and enjoy!

Notes

*Store leftovers in fridge for 5 days
