Crispy Salami Antipasto Bites

These Crispy Salami Antipasto Bites are such an easy and delicious appetizer to make. One of my favorites for bite-sized eats and these come together in 20 minutes.

Ingredients

Scale
  • 4 ounces Genoa salami (try not to use the small size – should be at least 4 inches)
  • 1/3 cup roasted red peppers, chopped
  • 1/2 cup mini mozzarella balls (cut in fourths)
  • 3/4 cup marinated artichoke hearts, chopped
  • 3 tablespoons fresh basil, chopped
  • 1 teaspoon balsamic vinegar
  • Sea salt and black pepper to taste

Instructions

  1. Preheat oven to 375 degrees F
  2. Place a slice of salami into the mini muffin tin, forming them into the well. I usually cut a little slit in the salami to help form it too
  3. Add to oven and bake for 10 minutes then remove from heat and allow them to cool
  4. As the salami bakes and cools, make the antipasto salad by combining the peppers, mozzarella, artichokes, basil, balsamic and salt and pepper
  5. Once the salami is cooled, stuff each with some of the salad and serve

Notes

*Store in fridge until ready to serve if preparing in advance. I recommend adding the antipasto salad right before you serve if you can
