Salmon bites:

  • 1 pound salmon, skin removed and cut into 12 inch pieces
  • 1 tablespoon honey
  • 1/2 tablespoon gluten-free flour (or regular flour)
  • 2 tablespoons olive oil
  • Sea salt and pepper, for seasoning

Avocado Citrus Salsa:

  • 1 large hass avocado, diced
  • 1/3 cup pickled red onions, chopped
  • 1 teaspoon naval orange zest, after zesting
  • 2 small navel oranges, peeled and cut into small pieces after zesting
  • 1 teaspoon lime zest, juice lime after zesting
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 3 tablespoons cilantro, chopped
  • Sea salt and pepper, for seasoning

Instructions

Prep the Salmon:

  1. Start by patting your salmon pieces dry with a paper towel—this helps them crisp up instead of steam.
  2. Place the salmon pieces in a bowl and toss them with honey, flour, olive oil, salt, and pepper until evenly coated.

Cook the Salmon (Two Options):

Pan-Fried:

  1. Heat a large skillet over medium heat. Once hot, add the salmon pieces in a single layer, making sure not to overcrowd the pan.
  2. Cook for about 2–3 minutes per side, turning carefully, until all sides are golden brown and crispy. The salmon should be cooked through but still tender inside.

Oven-Baked with Broil Finish:

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Arrange the salmon pieces in a single layer, leaving a little space between each piece.
  3. Bake for 10–12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  4. Then switch the oven to broil and broil for 2–3 minutes, watching closely, until the tops of the salmon bites become golden and slightly crispy. Tip: Keep a close eye during broiling—this step adds crispiness fast!

Make the Avocado Citrus Salsa:

  1. While the salmon cooks, prepare your salsa.
  2. In a medium bowl, combine: diced avocado, pickled red onions, orange zest and chopped oranges, lime zest and lime juice, minced garlic, chopped cilantro, salt and pepper.
  3. Gently mix everything together, being careful not to mash the avocado.

Assemble and Serve

  1. Transfer the crispy salmon bites to a serving plate and spoon the avocado citrus salsa over the top—or serve it on the side for dipping. I love serving this with rice!
  2. Serve immediately while the salmon is warm and crispy.
