    I am about to make a very bold statement.

    Are you ready?

    This is my favorite recipe EVER. Paleo Dark Chocolate Marble Sweet Potato Loaf has officially won over my heart, soul and every ounce of space in my stomach. I am a sucker for any bread/loaf recipe, that is for SURE.

    I so did not expect to love this bread so much, especially since I am pretty new to the whole sweet potato-loving crew. I never really enjoyed them until recently when I was in San Diego and had the best crispy thin-cut sweet potato fries ever. Since then I have been craving them like crazy and love finding unique ways to use them.

    This bread is absolutely a unique way to use sweet potatoes. I totally underestimated the usage of them and am so pleasantly surprised with how this loaf came out.

    Not to mention it has a dark chocolate loaf layer and a crumble on top! It is super moist (yes, whatever I love that word) and has no refined sugar, grains, gluten or dairy!

    There are three parts to this recipe so it definitely looks a little intimidating but I promise you it is much easier to make than it appears! One layer is a homemade sweet potato bread recipe then the other two chocolate layers use Simple Mills Chocolate Muffin Mix aka my go-to baking mix for everything. They are such a game changer in the food space and I am so grateful for products like theirs.

    Simple Mills makes a variety of grain-free and coconut sugar-sweetened baking mixes, pizza mixes, breads and now they even have ready-to-eat products like cookies and various crackers. It is unreal how delicious it all tastes and they use ingredients that I use in my own home. So pretty much if I were to make a cupcake from scratch, it would be using the same ingredients Simple Mills uses too.

    Their mixes are amazing just following the directions on the back or you can get a little creative and think outside the box with them (inspo here). Just like this Paleo Dark Chocolate Marble Sweet Potato Loaf

    WHAT YOU NEED

    Simple Mills Chocolate Muffin Mix

    Eggs

    Coconut oil

    Vanilla extract

    Almond flour

    Coconut four

    Cinnamon

    Nutmeg

    Ground ginger

    Cooked sweet potato

    Maple syrup

    Ingredients

    • Sweet Potato Layer:
    • Dry ingredients:
    • 2 cups almond flour
    • 2 tablespoons coconut flour
    • 1 teaspoon baking powder
    • 1 teaspoon cinnamon
    • 1 teaspoon nutmeg
    • 1 teaspoon ground ginger
    • Wet ingredients:
    • 1 teaspoon vanilla extract
    • 1 cup cooked sweet potato, mashed
    • 2 eggs
    • 1/4 cup maple syrup
    • Chocolate layer:
    • 1/2 box Simple Mills Chocolate Muffin Mix (about 1 cup + 2 tablespoons)
    • 1 egg, slightly beaten
    • 3.5 tablespoons melted coconut oil
    • 1/2 cup water
    • Chocolate Crumble Layer:
    • 1/2 box Simple Mills Chocolate Muffin Mix (about 1 cup + 2 tablespoons)
    • 2 tablespoons melted coconut oil
    • 1/2 teaspoon vanilla extract
    • 1 tablespoon water

    Instructions

    1. Sweet Potato Layer:
    2. Place roasted sweet potato in a food processor with about 1/2-3/4 cup water and process until completely smooth. You can add more water if necessary
    3. Combine dry ingredients in a large bowl and whisk to completely combine
    4. Combine wet ingredients in a medium bowl and whisk to completely combine
    5. Add wet ingredients to dry ingredients and whisk to completely combined and set aside
    6. Chocolate layer:
    7. Whisk together eggs, melted coconut oil, water and vanilla in a large bowl
    8. Add in chocolate muffin mix and mix well until complete combined then set aside
    9. Chocolate Crumble Layer:
    10. Mix together the melted coconut oil, water and vanilla then add chocolate mix
    11. Stir until evenly combined (it may be crumbly, it is ok!0
    12. Final directions:
    13. Preheat oven to 350 degrees and grease a bread pan with coconut oil and pour sweet potato loaf on bottom
    14. Add the chocolate layer and swirl with a tooth pick if desired, if not just leave as is
    15. Sprinkle the crumble layer on top and bake in oven for 30 minutes then add a layer of tin foil on top and bake for another 20-25 minutes or until ready! I used toothpick test to see if it is ready
    16. Let the bread cool for about 45 minutes before cutting (I know, patience!!)
    17. *Will stay good for 5 days or keep in fridge/freezer for longer!

      1. hi ariel! i recommend finding a chocolate loaf recipe and combining it with this! since it was a sponsored post for simple mills, i have only used the mix. also the loaf would be great with just the sweet potato part and add some chocolate chips 😉

    3. I made this!!! It is so so good and I’m already planning on making it again! I don’t see where the chocolate chips come into the recipe though?
